Ingredients
4 skinless salmon filets
1 long Italian loaf, cut into 1½-inch slices
4 tablespoons olive oil
4 tablespoons red wine vinegar
1-2 tablespoons fresh oregano leaves
4 garlic cloves, minced
1 pint grape tomatoes, sliced in half
4 on-the-vine tomatoes, quartered
½ red onion, sliced
½ cucumber, sliced
8-10 large basil leaves, torn
3-4 tablespoons lightly chopped flat-leaf parsley
2-3 teaspoons lemon zest
Juice of 1 lemon
Blackstone SPG Seasoning
Blackstone Tuscan Herb Seasoning
Shredded Grana Padano
Directions
1. Heat your Blackstone griddle to medium-high heat. Add a bit of olive oil and toast the bread slices on both sides for about 2-3 minutes per side.
2. In a large mixing bowl, add the oil, vinegar, oregano, garlic, tomatoes, red onion, cucumber, basil, parsley, lemon zest, lemon juice, and a few shakes of Blackstone SPG Seasoning. Gently toss to mix the ingredients evenly.
3. Once the bread is toasted on both sides, cut it into bite-sized pieces and toss it into the bowl with the tomatoes. Gently mix all ingredients together.
4. Season the salmon on both sides with Blackstone SPG Seasoning and Blackstone Tuscan Herb Seasoning.
5. Turn the griddle up to high heat and cook the salmon for 2-3 minutes on each side.
6. To plate, add the tomato salad to a family-style serving platter. Cut the salmon into large chunks and place it on top of the salad. Garnish with a bit of lemon zest and shredded Grana Padano.

It’s Burger Week at Camp Griddle More, and Jeremy is cooking up his favorite Bacon Cheddar BBQ Pretzel Burger. With sharp cheddar, thick-cut bacon, and a sweet-spicy sauce on a pretzel roll, this burger is stacked with flavor. Each bite is the perfect mix of salty, tangy, and sweet.

Ingredients
4 pretzel rolls, sliced
1 lb ground beef (80/20 blend preferred)
4 slices sharp cheddar cheese (from the deli, thick cut)
8 slices thick-cut bacon
Pickle slices, for topping
Whiskey burger seasoning, to taste
Griddle spray or oil, for cooking
¼ cup Sweet Baby Ray's BBQ sauce
1 tbsp Mike’s Hot Honey (or regular honey with a dash of hot sauce)
Directions
1. In a small bowl, mix the Sweet Baby Ray's BBQ sauce with Mike’s Hot Honey to create the BBQ Honey Sauce. Set aside.
2. Slice the pretzel rolls and set aside.
3. Preheat a griddle or skillet on medium heat. Add the bacon and cook, flipping occasionally, until crispy but not burnt. Set aside on a paper towel-lined plate to drain.
4. Divide the ground beef into 8 equal portions, then roll each into a ball. Season generously with whiskey burger seasoning.
5. Increase griddle or skillet heat to high. Lightly oil the surface or spray your spatula with cooking spray to prevent sticking. Place each beef ball on the hot griddle, press down with a spatula to flatten, and cook until browned and crispy, about 2-3 minutes per side.
6. Once you flip the burgers, immediately add a slice of sharp cheddar to each patty, allowing it to melt as the burger finishes cooking.
7. Place the sliced pretzel rolls cut-side down on the griddle to toast briefly until golden.
8. To assemble the burgers, stack two patties on each pretzel roll base. Add two slices of crispy bacon, a few pickles, and a generous drizzle of the BBQ Honey Sauce. Top with the other half of the pretzel roll.

Amazing way to make baked BBQ Chicken Drumsticks, we serve them with Baked Beans and Pasta Salad..
BBQ Chicken Drumsticks
Ingredients:
14 Drumsticks
1-1/2 - 2 cups BBQ Sauce, your favorite
1 tbsp Paprika
1 tbsp Onion, dried/minced
1 tbsp Cumin, ground
1 tbsp Garlic, granulated
2 tsp Pepper
2 tsp Salt
1 tbsp Basil, dried
2 tbsp Hot Sauce, your favorite (optional)
2 tbsp Oil + extra
Combine Paprika, Onion, Cumin, Garlic, Pepper, Salt & Basil, whisk well.
Optional, if you want to wash the Chicken Drumsticks.
Soak them a little bit in salted Water and clean with quartered Limes.
Rinse with Water and pat them dry.
Coat Drumsticks with Oil, Seasoning Mixture & Hot Sauce.
Cover with Plastic Wrap.
Refrigerate for 1 hour.
Preheat Oven 400°F.
Line Baking Sheet with Foil.
Coat lightly with Oil.
Place Chicken Legs in single layer on Baking Sheet.
Bake 20 Minutes.
Coat with BBQ Sauce and flip.
Continue baking for 20 Minutes.
Coat Drumsticks on both sides and bake extra 10 Minutes.
Done when juices run clear & internal Temp minimal 165° F.

Ingredients:
1 Delicata Squash
1 Butternut Squash
1 sm Kabocha Squash
1 Red Onion, cut bite-sized
6-7 Garlic Cloves, smashed
1 tbsp fresh Rosemary, chopped
1 tsp ground Cumin
1 tsp Salt
2 tsp smoked Paprika
1/4 tsp Pepper
2 tbsp Oil (your choice)
1 tbsp fresh Parsley, chopped
Cut the Ends off the Delicata Squash.
Slice in half lengthwise & scoop out Seeds.
Cut in bite-sized Cubes.
Slice Ends off Butternut Squash.
Cut in half lengthwise, peel & scoop out Seeds.
Cut in bite-sized Cubes.
Cut Ends off Kabocha Squash.
Slice in half & scoop out Seeds.
Cut in bite-sized Cubes.
Line large Baking Sheet with Foil.
Preheat Oven 425°F.
Combine Rosemary, Cumin, Salt, Paprika & Pepper, whisk well.
In large bowl combine all Squash Cubes, Red Onion, Garlic, Seasoning Mixture & Oil, mix well.
Place in single layer on prepared Baking Sheet.
Roast 15 Minutes.
Flip everything over & continue roasting 10-15 Minutes or until tender.
Serve and sprinkle with Parsley.

6-8 boneless, skinless chicken thighs
Blackstone SPG Seasoning (or salt, pepper, and garlic powder)
Blackstone Tuscan Herb Seasoning (or an Italian herb blend)
1 ½ sticks unsalted butter, softened
¼ cup shelled pistachios
8-10 fresh basil leaves
Zest of 1 lemon
1 (16 oz) box of rigatoni, cooked al dente
2 pints grape tomatoes
Freshly shredded Parmigiano-Reggiano
Additional lemon zest
Directions
1. Season the Chicken: Season the chicken thighs evenly on all sides with Blackstone SPG and Tuscan Herb Seasonings.
2. Cook the Chicken: Heat your grill (or stovetop) to medium-high and add a drizzle of olive oil. Cook the chicken thighs for 4-5 minutes on each side, until fully cooked.
3. Prepare the Basil Pistachio Butter: In a food processor, combine the butter, pistachios, basil leaves, lemon zest, and a few shakes of Blackstone SPG seasoning. Pulse until the mixture is smooth and fully combined.
4. Chop the Chicken: Once the chicken is cooked, remove it from the grill and chop into bite-sized pieces.
5. Mix Everything Together: On the same grill (or pan), add a bit of water to the area where the chicken was cooked. Place the cooked rigatoni over the top, scraping and tossing the noodles in the liquid. Add the grape tomatoes, chopped chicken, and a few spoonfuls of the basil pistachio butter. Toss everything together to evenly coat the noodles and chicken.
6. Serve: Finish the dish with a generous amount of freshly shredded Parmigiano-Reggiano. Garnish with additional lemon zest and a light sprinkle of Blackstone Tuscan Herb Seasoning. Serve hot.

1. Drizzle oil over medium-high heat on a griddle. Add the sausage, bell peppers, and onion. Season with fajita seasoning and toss to coat. Cook until the vegetables are tender and the sausage is heated through, adding 1 tbsp of garlic paste for extra seasoning.
2. Add the cooked pasta to the griddle. Season again with fajita seasoning and 1 tbsp of garlic paste. Stir in the butter, allowing it to melt and coat the pasta.

How to make Amazing Maple Glazed Pumpkin Bread

This Maple Glazed Pumpkin Bread is amazingly moist and delicious, great with a cup of Tea or Coffee.
Pumpkin Bread
Ingredients:
1-3/4 cups Flour
2-1/2 tsp Pumpkin Pie Spice
1/2 tsp Salt
1/2 tsp Baking Soda
1 tsp Baking Powder
15 oz Pumpkin Puree
3/4 cup Sugar
3/4 cup Brown Sugar
2 Eggs
1-1/2 tsp Vanilla
1/2 cup Oil
1 cup White Baking Chips (or white Chocolate Chips)
Glaze:
1-1/2 - 2 cups Powdered Sugar
2-1/2 tbsp Butter
1/4 cup Maple Syrup
1/4 tsp Pumpkin Pie Spice
Pinch of Salt
Grease & line Loaf Pan with Parchment Paper.
Preheat Oven 350°F
Combine Flour, Pumpkin Pie Spice, Salt, Baking Soda & Baking Powder whisk well.
Mix together Pumpkin Puree, Sugar, Brown Sugar, Eggs, Vanilla & Oil.
Incorporate Flour Mixture.
Fold in white Chips.
Fill prepared Loaf Pan.
Bake 60 Minutes or until tester comes out clean.
Rest 5 Minutes in Loaf Pan.
Cool completely on Wire Rack.
Sift Powdered Sugar, Salt & Pumpkin Pie Spice together.
Microwave Butter & Maple Syrup (until Butter is melted 10 Seconds at a time)
Add Powdered Sugar Mixture, whisk well until smooth. (more Powdered Sugar if you like Glaze thicker)
Coat cold Pumpkin Bread with Glaze, let set.
Enjoy!

This extra smoky French onion soup is my interpretation of the classic French onion soup that we all know and love. There are many recipes for that famous soup online, but I wanted to use my imagination and add my own spin on the classic. My French onion soup is extra smoky because I added smoked paprika to it. For even more smoky notes I topped it with grated, smoked Gruyere cheese. I also added some mushrooms to make the soup richer. Those little tweaks made the soup irresistible. The onion and the mushrooms go so well with the smoky notes. Every spoonful is so flavorful.

Smoked Tomato Chicken Caprese | Blackstone Griddles

Chef Nate is using the Blackstone Griddle Pellet Grill Combo to cook up something amazing—Smoked Tomato Chicken Caprese. He's pairing it with cheesy asparagus, and this combo is seriously good. Add some balsamic glaze on top, and your guests will love it!

Ingredients
4 boneless, skin-on chicken thighs
2-3 pints grape or cherry tomatoes
6-8 cloves fresh garlic, smashed
1 tbsp. dried oregano
1 leek, thinly sliced
Blackstone Tuscan Herb Seasoning
Blackstone S.P.G. Seasoning
A handful of asparagus, cleaned and trimmed
8-12 slices mozzarella cheese
8 large fresh basil leaves
Balsamic glaze
Grana Padano or Parmigiano Reggiano, grated
Olive oil
Directions
1. Preheat your Blackstone Griddle Pellet Grill Combo to 375°F.
2. On a large sheet tray, combine the tomatoes, garlic, leeks, and dried oregano. Season with Blackstone S.P.G. and Tuscan Herb Seasoning, then drizzle with olive oil. Toss to coat evenly.
3. Place the tray in the pellet grill and cook for 20-30 minutes, until tomatoes are soft.
4. In a large mixing bowl, coat the chicken thighs with olive oil and season with Blackstone S.P.G. and Tuscan Herb Seasonings. Ensure the skin remains attached.
5. Heat your griddle to medium heat. Place the chicken skin-side down and cook for 5-6 minutes, then flip and cook until fully cooked through.
6. Remove the chicken from the griddle and let it rest.
7. In the remaining chicken fat, cook the asparagus until nearly done, about 90% cooked.
8. Stack the asparagus into individual serving piles, place mozzarella slices and basil leaves on top, and cover with a dome to melt the cheese. This should take about 2 minutes.
9. Remove the tomatoes from the pellet grill and mash them together with a fork to create a rustic sauce.
10. To plate, place the cheesy asparagus on the bottom, followed by the chicken thighs. Spoon the mashed tomatoes over the chicken, drizzle with balsamic glaze, and garnish with grated Parmigiano or Grana Padano. Serve hot.

Plantain Apple Muffins
Ingredients:
1 Plantain, peeled & mashed
1 Apple, peeled, cored & diced
1-3/4 cups Flour
1 tsp Cinnamon
1/2 tsp Salt
1 tsp Baking Powder
1 tsp Baking Soda
1/4 cup Brown Sugar
1/2 cup Sugar
1/2 cup Butter, melted
1 Egg
Topping:
2 tbsp Sugar
1 tsp Cinnamon
12 Muffin Paper Cups
Preheat Oven 350° F
Place Paper Cups in Muffin Pan.
Combine Flour, Cinnamon, Salt, Baking Powder & Baking Soda, whisk well, set aside.
Cream together Brown Sugar, Sugar & Butter.
Add Egg and mix.
Add Plantain and mix.
Incorporate Flour Mixture in batches.
Fold in Apples.
Fill each cup equally with Batter.
Sprinkle half of Cinnamon Sugar over Batter.
Bake 20-22 Minutes.
Sprinkle the rest of Cinnamon Sugar immediately after baking over Muffins.
Rest 5 Minutes in Pan.
Cool completely on Wire Rack.
Enjoy!

Cranberry Almond Cookies
Ingredients:
1 cup Cranberries, dried
1/2 cup Almond Slices, toasted
1-3/4 cups Flour
1/2 tsp Salt
1/2 tsp Baking Soda
1/2 cup Coconut Oil, soft
3/4 cup Sugar plus extra to coat
1 Egg
1 tsp Vanilla
Soak Cranberries in boiling Water for 10-15 Minutes, remove & pat dry.
Combine Flour, Salt & Baking Soda, whisk well set aside.
Cream together Coconut Oil & Sugar.
Add Egg and Vanilla.
Incorporate Flour Mixture.
Fold in Almonds & Cranberries.
Cover with Plastic Wrap and refrigerate 1 hour.
Preheat Oven 350°F.
Line Cookie Sheet with Parchment Paper.
Form equal sized Dough Balls (approx 25-26gr. each)
Coat each Ball with Sugar.
Place equally spaced apart on Cookie Sheet.
Bake 10-12 Minutes or lightly golden.
Rest on Sheet for 3 Minutes.
Cool completely on Wire Rack.
Enjoy!

Recipe for Delicious Corn Fritters

Great Recipe for Fritters, made with fresh Corn. We server them with a dollop of Sour Cream and a sprinkle of Green Onions.
Corn Fritters
Ingredients:
2-3 Corn, (2-1/4 cups)
3 tbsp Green Onion, chopped
1-1/4 cups Flour
1/4 tsp Pepper
1 tsp Salt
1/2 tsp Cumin
2 tsp Sugar
2 tsp Corn Starch
1-1/2 tsp Baking Powder
2 Eggs
1/2 cup Milk
Oil
Remove Corn from Cobs, set aside.
Chop Green Onions, set aside.
Combine Flour, Pepper, Salt, Cumin, Sugar, Corn Starch & Baking Powder, whisk well, set aside.
Whisk together Egg & Milk.
Incorporate Flour Mixture.
Mix in Corn & Green Onions.
On med/high Temp. heat 2 tbsp of Oil in medium sized Skillet.
Place down three large spoon full of Batter, cook Fritters until golden on both sides. Approx. 2- 3 Minutes on each side.
(cook in batches)
Remove and drain on Paper Towel.
Place on Baking Sheet, keep warm in Oven on low Temp. until ready to use.
Enjoy!

Ingredients For Boiling Pasta:
250 grams dry linguine pasta
8 cups water
1 tsp salt
Ingredients For Making Creamy Garlic Pasta Sauce With Mushrooms:
2 tbsp olive oil
2 tbsp unsalted butter
3 large cloves of garlic - minced
250 ml heavy cream
Salt & crushed black pepper to taste
225 grams of cleaned &sliced Cremini mushrooms
1/2 cup chicken stock
1/2 cup pasta water
1/4 cup grated parmesan cheese
2 tbsp freshly chopped flat leaf parsley
Cooking Instructions:
In a large pot bring 8 cups of water to rolling boil
Add salt & dry linguine pasta
Cook for 9 minutes, until al dente
In the meantime let's make our Pasta Sauce:
Add olive oil and unsalted butter to a hot sauce pan
Once butter is melted add minced garlic
Reduce heat to medium-low and saute garlic for 30 seconds
Add 250 ml heavy cream and let it thicken by stirring it for 4 minutes
Now pour in chicken stock and pasta water
Next add salt & crushed black pepper to taste, mix well
Now add sliced Cremini mushrooms & cook them for 3 to 4 minutes
Toss in capers, mix well
Grate in 1/4 cup Parmesan cheese and freshly chopped parsley
Wala! Your delicious Pasta in Creamy Garlic Sauce With Mushrooms is ready! Garnish with grated Parmesan cheese and fresh parsley
Finally, transfer pasta to a bowl. Buon Appetito!
