Recipe for Scrumptious Plantain Apple Muffins
If you need a new idea for a Muffin, try this scrumptious Plantain Apple Muffin Recipe, great for Breakfast or Brunch.
Plantain Apple Muffins
Ingredients:
1 Plantain, peeled & mashed
1 Apple, peeled, cored & diced
1-3/4 cups Flour
1 tsp Cinnamon
1/2 tsp Salt
1 tsp Baking Powder
1 tsp Baking Soda
1/4 cup Brown Sugar
1/2 cup Sugar
1/2 cup Butter, melted
1 Egg
Topping:
2 tbsp Sugar
1 tsp Cinnamon
12 Muffin Paper Cups
Preheat Oven 350° F
Place Paper Cups in Muffin Pan.
Combine Flour, Cinnamon, Salt, Baking Powder & Baking Soda, whisk well, set aside.
Cream together Brown Sugar, Sugar & Butter.
Add Egg and mix.
Add Plantain and mix.
Incorporate Flour Mixture in batches.
Fold in Apples.
Fill each cup equally with Batter.
Sprinkle half of Cinnamon Sugar over Batter.
Bake 20-22 Minutes.
Sprinkle the rest of Cinnamon Sugar immediately after baking over Muffins.
Rest 5 Minutes in Pan.
Cool completely on Wire Rack.
Enjoy!
