1 tablespoon Dijon mustard
1.5 teaspoons salt
0.5 teaspoon ground black pepper
0.5 teaspoon nutmeg
2 tablespoons lemon juice
Parsley to taste
Let it marinate for 30 minutes
300g smoked bacon, cooked
Paprika to taste
Place in a preheated oven at 180°C for 40 minutes, then uncover and bake for an additional 10 minutes at 240°C

In the village, we gather fresh herbs from the gardens and prepare them for cooking.
The steps to prepare a stuffed vegetable dish are as follows: first, we wash and chop the herbs.
Then, we sauté the meat and onions together and prepare the stuffed meat sauce.
On the side, we chop some walnuts and mix them with minced onions, adding spices to the sour plum juice.
We stuff each of these mixtures into vegetables like eggplant, tomatoes, and bell peppers, and cook them gently over low heat.

For Chicken Breast:
1. 2 Chicken Fillets
2. Salt to taste
3. Black Pepper (ground)
4. 1 Onion
5. 2 tbsp Vegetable Oil
6. 200g Mushrooms

8. 1 bunch Parsley
9. 1 tsp Salt
10. 0.5 tsp Black Pepper (ground)
11. Dried Basil, Garlic, and Tomato mix
12. 300g Smoked Cooked Bacon
For the Marinade:
1. 0.5 tsp Salt
2. 0.5 tsp Black Pepper (ground)

6. 2 tbsp Ketchup
7. 3 tbsp Soy Sauce
Preparation:
1. Preheat the oven to 180°C (350°F).
2. Bake the stuffed chicken for 1 hour.
Optional Pork Fillet Version:
1. 2 Pork Fillets
For the Marinade:
1. 1.5 tsp Salt
2. 1 tbsp Brown Sugar
3. 1 tsp Mixed Pepper
4. 1 tsp Coriander
5. 1 tsp Dried Onion
6. 3-4 Garlic Cloves
7. 1 tbsp Hot Pepper
8. 3 tbsp Soy Sauce
9. 2 tbsp French Mustard
10. 5-7 sprigs of Thyme
11. 12-15 slices of Cooked Smoked Bacon
Baking:
1. Bake at 180°C for 60 minutes.
2. Add 3 tbsp Tomato Ketchup.
3. Bake at 200°C for an additional 10-15 minutes.
Salad:
1. 200g Cabbage
2. 1 Tomato
3. 1 Cucumber
4. 2 Boiled Eggs
5. 300g Canned Beans
6. Parsley to taste
7. 100ml Olive Oil
8. 1 Egg
9. 1 tbsp Lemon Juice
10. 1 tsp Sugar
11. 1 tsp Salt
12. 1 tsp Dijon Mustard
13. Salt and Black Pepper to taste
14. Bake for another 10-15 minutes at 240°C until golden.

Cover with plastic wrap and let it marinate for 15 minutes.
- 2 onions
- 2 tomatoes
- 6 potatoes
- 1 teaspoon salt
- 0.5 teaspoon ground black pepper
- 0.5 teaspoon curry powder
- 1 teaspoon paprika
- 0.5 teaspoon dried garlic
- 0.5 teaspoon thyme
- 2 tablespoons vegetable oil
- Wooden skewers
- 300 grams smoked bacon, cooked
- 3 sheets of baking foil
- 2 sheets of baking paper
**Salad:**
- 2 zucchinis
- 2-3 cloves of garlic
- 0.5 teaspoon salt
- 0.5 teaspoon ground black pepper
- 1 teaspoon French mustard
- 1 tablespoon honey
Let it marinate for 30 minutes.
**Glaze:**
- 1 teaspoon salt
- 0.5 teaspoon ground black pepper

Place in a preheated oven at 240°C for 10-15 minutes.

Place in a preheated oven at 180°C for 40-50 minutes.
Remove from the oven, let it cool, and refrigerate for 2-3 hours.
**Spinach Omelette**
- 200 grams spinach
- 3 eggs
- 100 ml cream (15%)
- 0.5 teaspoon salt
- 0.5 teaspoon ground black pepper
Mix well.
- 30 grams butter
- 2 tomatoes
- 100 grams mozzarella

These days, during the sour cherry season when they are abundant in the market, one of the dishes that is frequently prepared is Sour Cherry Rice.
Sour Cherry Rice is one of the authentic Iranian dishes that is known for its vibrant colors and diverse flavors.
The cooking method is quite simple. First, we roasted the sour cherries with a little sugar, and then we combine them with rice, meatball, and Some brewed saffron to let it cook.

Nomadic women in the Alborz Mountains lead a challenging yet fulfilling life. Their daily routine involves tending to livestock and processing milk to produce various dairy products. The process begins with milking the sheep and heating the milk. The warmed milk is then used to make yogurt and cheese, which are further churned to produce butter and buttermilk. To make cheese, buttermilk is heated, and yogurt is added. Once the buttermilk boils, a type of cheese suitable for winter storage is prepared. A special fermenting agent is added to the milk to aid in the cheese-making process. After boiling, the milk is cooled, the fermenting agent is added, and the mixture is left to set before being placed in a container to solidify. After making dairy products, the village women bake local bread and prepare a delightful afternoon meal using the dairy products. Every year, towards the end of the spring season, we go to our highland to pick Echium amoenum. We collect these highly beneficial flowers to make Echium amoenum jam and also dry them to prepare herbal tea throughout the year and benefit from its abundant properties.
After the jam is prepared, we add a little lemon juice to it, which prevents crystallization and also changes the color of the jam due to the acidic nature of lemon juice, making it vibrant.
Echium amoenum jam is incredibly delicious and has numerous medicinal properties. It is also quick to prepare. If you have Echium amoenum around you, be sure to make jam out of them and enjoy it.

Today is the beginning of the second month of the summer season, and we are experiencing a cloudy and rainy day in our village, which is one of the great blessings of the summer season!
the smell of the soil getting wet under the rain and the sound of water rushing from the clay roof of the house; It takes me back to my childhood days when I spent the rainy season with my grandmother and her wood stove.
The smell of burning firewood smoke inside the wood stove, colorful and always hot tea in grandma's kettle and the table always ready to be spread with local dairy products and her own homemade bread!
To revive these beautiful memories, my mother and I decided to cook today's food in the tailor's house with a beautiful clay roof, but the surprise of the rain in the middle of the summer season forced us to continue working on the porch of the house😅🌦

One of my favorite fish, besides the rainbow trout, is the fish known locally as Fitofak. This fish, combined with vegetables, especially hot peppers, is incredibly delicious.
Today, we are preparing this fish along with several types of herbs and serving it with herb-infused rice.
The spiciness of the herbs, paired with the delightful flavor of the fish and fresh mushrooms grown locally, creates a fantastic combination that I absolutely love.

I visited this beautiful shop filled with wooden home decor, beautiful hand-woven rugs, and various handicrafts made by local artisans! People here sell their freshly harvested garden products directly at the entrance of the same garden, which allows for direct, affordable, and extremely fresh and healthy purchases!
Buying from these small stalls is very pleasant and lovely 😊😅.
Among the products grown in these gardens are cucumbers, tomatoes, pumpkins, watermelons, eggplants, bell peppers, and hot peppers.
Today, at the suggestion of my mother and some of our visitors who requested a plant-based meal, we are making a very delicious and healthy dish from these fresh products.
This dish can be served as a main course for vegetarians and will surely become a favorite for those who try it!
Besides avoiding meat, the fact that we don't fry it with oil makes it even healthier.

Though summer life here is admirable, autumn and winter come with their own set of challenges.
Today, I went to one of the nearby springs to get water for cooking. In this warm summer weather, the cool spring water was a refreshing treat. 😊😅
Today's dish is one of our most famous meals, often prepared for important and grand ceremonies. It's called Khoresh-e Goosht (Meat Stew), made from beef and veal, fried in sheep tail fat.

We and the local people harvest a lot of produce from our gardens every year and because of the four seasons here, we plant and harvest unique crops for that season. In the next videos, we will try to prepare various foods from our organic and garden products and introduce them to you dear ones.

Method of preparation: We beat or grind the meat completely, grate the onions, take the juice and Pour into the meat. Add salt and pepper and a little turmeric to it and mix well.
After soaking the sliced eggplant for a while in a small amount of salt, we wash it with bitter water and fry it in oil until it becomes soft.
Then we put the prepared meat like a roll inside the eggplant sheets and connect them together to form beautiful roses.

Our ancestors cleverly utilized limited resources, planting wheat and barley in many available lands, and building water mills by rivers to produce flour. They would then make dough from the flour and bake various types of delicious bread.
My grandparents had a water mill in our village of Aqdagi, where they would grind wheat and barley. One of my mother’s favorite methods of baking bread is on a saj (a traditional iron griddle), which she still prepares for us today.
It's customary to use this bread with local brothy dishes like Abgoosht, enhancing the flavor of the meal. Today, by showcasing the preparation of this bread and dish, we hope to convey the delightful lifestyle of this land to you. Abgoosht Recipe:
Ingredients:
Lamb and mutton
Chickpeas
Potatoes
An onion
Dried plums
Tomato paste
Salt
Turmeric
Pepper
Preparation:
Grind the mutton and fry in hot oil.
Sauté chopped onions, add tomato paste, and mix into the meat with some water, simmering for an hour.
Add pre-soaked chickpeas.
Later, add dried plums and chopped potatoes, cooking over fire until the meat softens and the other ingredients are well cooked.

This dish is made from calf heart and liver, one of our traditional foods.
In the past, when modern electric appliances like refrigerators were not available to store food, various meat products were preserved using this method.
They would fry the meat or organs in sheep fat, place them in clay pots, and cover them with melted sheep fat.
The fat would solidify, preventing air from reaching the contents of the clay pot.
The pot was then placed in deep holes to keep it away from heat, allowing the food to be stored and consumed during colder seasons.
Today, we will cook this dish with fresh heart, liver, and vegetables since we have modern preservation methods and don't need to store food for later use.
