How to Make a Simple Tasty Chicken Marinade
Wash Chicken in very cold water. Next, add 2 table spoon salt or lemon juice in a large bowl of water. Leave the chicken breast to in the mix for 7 – 24 hours. Rinse the chicken with cold fresh water well before add the marinate mix.
INGREDIENTS FOR 6 CHICKEN BREAST:
6 Boneless Chicken Breast
2 Large Onions
4 Garlic
1 Sweet Pepper
1/4 teaspoon Grounded Black Pepper
1 table spoon of Salt
A pinch of Thyme (small leaves)
1 Grenadian/Cuban Thyme leaf
Finely chop or use an electric grinder to prepare the marinate mix.
Using the tip of a sharp knife, poke some small whole in the chicken breast. Add all your ingredients and mix well.
Leave to marinate 3 – 24 hours for the best results.

1 pack of frozen phyllo pastry dough – Defrost an hour before using.
INSTRUCTIONS
Start making the cheese filling, then the potato filling before cooking the meat. When all the fillings are mixed well and ready to go, start cooking the ground beef to medium rare.
Fill the pastries by spreading the phyllo dough on a flat surface, add the filling on the dough, spread evenly so that wen the dough is rolled up the ingredients are throughout the dough.
This is really easy and quick. Use the entire box of phyllo as it cannot be re-used once defrosted.
BAKING INSTRUCTIONS
Pre-heat at 350 degrees for 30 mins
Bake at 350 degrees 30-35 mins – Cheese
Bake at 350 degrees 35-45 mins– Meat & Potato

POTOTOE
1 potato sliced thin
2 cups of cold water
Leave in the water for 7 or more hours. Next, drain the potato with a colander and leave in the colander for 20 mins to remove the excess water.
The other option is to lay the potato slices on a piece of paper towel to remove excess water.
When the excess water is removed, place on a baking grill. A pinch of salt, pepper & chili powder (or whatever you fancy). Bake at 350
DIP
50 grams grated Asiago cheese
1 teaspoon Cream cheese
2 teaspoons of Mayo
Pinch of salt and pepper
A pinch of Chili pepper powder
A pinch of Mustard powder
Mixed together and microwave for 30 seconds. Stop and stir the mix after every 5-7 seconds or so.
EGGS
1 teaspoon (small) of butter
3 eggs
Place a frying pan to heat up on medium heat, add the butter to melt, then the eggs. You can fry or scrabble the eggs.
BAKING INSTRUCTIONS
Pre-heat at 350 degrees for 30 mins
Bake at 350 degrees 25 - 30 minutes. Keep a close eye on the potato slices, you will need to remove the ones that cooks first, to avoid burning the batch.

Generally, my habit is to salt the beef 24 hrs before marinating it.
1 lbs Grass-fed ground beef (Ground Beef)

½ of an Onion grind or finely chop

1 table spoon of Parsley
A pinch of Black Pepper
POTATO LAYER

100-150 grams of Asiago cheese grated
150 -200 grams of Swiss Appenzeller cheese grated
150- 200 grams of Strong Provolone cheese grated
150 -200 grams of Feta cheese crumble

1 table spoon English Double Cream
2 table spoons European Style Cream cheese
2 table spoons Melted Butter
INSTRUCTIONS
WHISK TOGETHER – Eggs, double cream, cream cheese and butter. This will be used at the bottom, between the layers, and the top of the Moussaka. Look at the video to see how the layering is done.. Egg Mix, Potato slices, Cheese, Meat, Feta, then Potato slices again - Repeat.

3 cups of mix dried fruits (Prunes, Strawberries, and Blueberries’)

¼ cup of Ice Wine (Vidal)
Leave these ingredients covered overnight so the dried fruits can re-hydrate.
OTHER INGREDIENTS
2 cups of grounded Granola Fruit Mix Cereal
1 cup of grounded Regular Oats
3 Eggs
150 grams of Melted Butter
2 teaspoons of English Double Cream
1 table spoon Cottage Cheese
4 ounces or ½ pack of Philadelphia Cream Cheese
1 teaspoon Vanilla
1 teaspoon Cinnamon
¼ cup of Ice Wine or Rum (Top cover the cake mid baking)
INSTRUCTIONS
Grind the oats and cereal together until they finely grounded. Use a whisk to mix the eggs, melted butter, cream cheese, cottage cheese and the double cream together. Whisk ingredients until it’s smooth. Add the mix fruit to the grounded granola, mix it all together so the granola coats the fruit mix. This will help the prevent clumpy fruit at the bottom. Add the mix of granola and fruit to the egg mix and fold it gently with a spatula, or spoon. Be gentle so that the bubbles remain intact.
Get your baking pan out, add your parchment paper or butter the pan if that’s unavailable. Pour the mixed into the baking pan and place into the oven to bake for 45 -50 mins.
BAKING INSTRUCTIONS
Pre-heat at 350 degrees for 30 mins
Bake at 350 degrees 50 minutes – Use a tooth pick to poke the middle. If the pick is clean the cake is done!!

Rub the salt into the top sirloin steak. Leave for 30 minutes.

Heat frying pan up on high heat.

Use a flat oven pan that you can easily layout the Tortillas. Cover with parchment paper, then start laying out the tortilla chips to cover the bottom.
Add some cooked ground beef, then cheese, then Tortilla chips. Repeat until all the ingredients are used up.
OVEN INSTRUCTIONS
Pre-heat at for 30 mins
Bake for 5 -6 mins, then grill for another 3-5 minutes until all the cheese are melted and the tortillas are slightly brown. Then serve.

Goat yogurt comes in plain flavour, so the cherry filling made in the video title “Making Cherry Pie filling with Xylitol” was added to the yogurt. To reduce the sourness two table spoons of condense milk was also added.
750 grams of plain goat yogurt, with 2 cups of cherry filling and 2 table spoons of condense milk are mixed.
In a bowl, pour 2-3 cups of your favourite granola mix, added ½ cup of crushed walnuts, a handful of blue berries and 2-3 cups of yogurt. Mix the yogurt and granola, then snack away.

In a mixing bowl, whisk egg with vanilla, cinnamon and oil. Add ½ of the cake mix from the box, add the cherries, and white chocolate to the mix. Mix the ingredients well with a fork. Pour the mix into the cup cake cup and bake for 20 – 25 minutes. Use a tooth pick to poke the middle to test if the muffins are fully baked. A clean tooth pick after poking means the muffins are done!

2 cups of crushed Walnuts
1 ¼ cup of mix chocolate chips (Milk & White chocolate chips)
2 table spoons of caramel pieces
½ cup of Sweet Shredded Coconut
INSTRUCTIONS
Place the white and milk chocolate in a heat resistant bowl. Have a pot of water on low heat, place the bowl of chocolate chips on the top so it is resting on the edge a bit. Stir slowly as the chocolate melts. You can also microwave the chocolate chips for 1 ½ minutes, stopping every 20 secs to stir the chocolate chips as it melts.
Next mix the walnuts with the shredded sweet coconut. Add the mix coconut and walnuts into the melted chocolate and mix well.
On parchment paper, place small clumps of the mix on the sheet. Leave in the refrigerator for 20 minutes. While you wait for the chocolate to cool off, mix 2 table spoons of shredded sweet coconut with 2 table spoons of Carmel pieces, grinder into a powder.
Grind - Caramel pieces and Sweet Shredded Coconut. This mix will be sprinkled on top of the chocolate pieces.
Remove the chocolates from the refrigerator and sprinkle the coconut caramel mix on top. – Enjoy & share!!

INGREDIENTS
3 lbs. Grass-fed Ground Beef (regular ground beef)
3 teaspoons of Salt
ALTERNATE INGREDIENTS
Regular ground beef is perfectly ok. No spices were added as per my preference.
There are some great spices such as chili, teriyaki, black pepper, sumac, hot sauce and sweet & sour sauces that can be added to the recipe.
PREP 24 HRS AHEAD
Mix ingredients together and leave overnight in the refrigerator. This prep time is important to get really good flavouring.
INSTRUCTIONS
Cut parchment paper into square to fit into the dehydrator. On the counter top place a small amount of ground beef in the middle of the paper. Add another paper on top of the first, and with a rolling pin spread out the mix.
In the video, the mix is spread very thin so it comes out very crispy.
Double parchment paper is used because it traps the grease from the ground beef from spilling into the dehydrator. Makes for a quick clean up at the end.

ALTERNATE INGREDIENTS
Sour cream or cream cheese can be used instead of yogurt. Any kind of peppers, sweet or hot.
Whole or grounded chicken breast can be used. A pinch of black pepper can be added. Baking soda can be added to make if fuller or thicker. No baking soda or black pepper was added to the recipe in this video.
COOKING INSTRUCTIONS
Chicken breast was washed and seasoned 24 hrs. prior. The seasoning ingredients: salt, black pepper, garlic, cooking onions, thyme, masala, and yogurt.
Finely chop or grind the parsley, green and cooking onion and oil together in a food processor. You can use ground chicken or de-bone a regular chicken breast as seen in the video. An electric mincer is used to mince the chicken after de-boning the chicken.
In a large bowl mix all the ingredients together. Grounded chicken, beef, spices, and an egg. Leave the mix to stand for 15 minutes, then form into patties.
Boil and drain the potatoes, add 2 table spoon of butter and mashed together.
FRYING INSTRUCTIONS
Heat up the oil – Fry for 20 – 25 minutes total 10 -12 minutes on both sides– or until it’s no longer pink inside.
BAKING INSTRUCTIONS
Pre-heat at 350 for 25-30 mins – Grill on high heat for 10-12 minutes on both sides – or until it’s no longer pink inside.

Drain out all the water using a strainer. Using a teacloth or paper towel take most of the moisture out before adding the rest of the ingredients.
In a large bowl
Whisk egg with a pinch of salt and pepper. Add the shredded potatoes, chopped green and white onions, yogurt, melted butter. Mix all ingredients with a spoon. Place into two or one small baking pan and bake for 45 mins.
OVEN INSTRUCTIONS
Pre-heat at 350 for 30 mins – Bake at 350 degrees until golden brown (40 – 45 mins).

INSTRUCTIONS
1 & 2/3 cups of milk
½ cup of Xylitol
4 cups of ground Quaker whole quick oats
2 cups of cherry pie filling
150 grams of unsalted butter (1/2 a stick of butter)
1 & 1/3 teaspoon of baking powder (Optional)
2 table spoon of Guava paste
2 eggs
Salt to taste (1 teaspoon)
ALTERNATE INGREDIENTS
Whole wheat flour, corn flour or regular white enriched flour can be used. Water, buttermilk, or whole milk or both can be used for the liquid portion of the ingredients. Salted butter or oil can be used instead of unsalted grass-fed butter. Sugar or honey or any sweetener can be used instead of Xylitol.
INSTRUCTIONS
Dry Mix
Using an electric grinder, slightly grind 2 cups of whole oats and leave to the side. Add the pinch of salt to taste.
Wet Mix
Whisk the eggs, melted butter, milk, and baking soda together. Add the grounded oats, cherry filling and guava paste to the mix. Gently mix all the ingredients together. Cover with plastic wrap and place in the
refrigerate for 1 hour.
After an hour, take the dough out of the refrigerator and portion out the cookies with a large spoon.
Place on the parchment paper, then flatten the cookies with a spoon. Bake until the cookies are light brown.

INGREDIENTS
2/3 cup of water and 1 cup milk (OR 1 & 2/3 cup of water)
4 cups of Quaker whole quick oats (ground them slightly, leave chunky bits)
1 cup of grated cheese (Extra old Cheddar, Gruyere, Provolone)
150 grams of unsalted butter (1/2 a stick of butter)

1 table spoon of Kaymak (Optional)
1 egg (Optional)
Salt to taste (1 teaspoon)
ALTERNATE INGREDIENTS

Add an egg is optional, the recipe works out just as well without eggs. Any type of cheese works.

Using an electric grinder, slightly grind 2 cups of whole oats. Do no grind them too much, leave lots of chunky bits. Add the pinch of salt to taste. Add the grated cheese to the dry ingredients mix.
Wet Mix
Whisk the egg, melted butter, Kaymak, milk (water), and baking soda together.
Add the wet mix into the dry mix using a spoon or spatula mix well. The mix will be very wet, leave to sit for a one hour before rolling the dough out flat. You can refrigerate or leave the dough out on the counter. You can use parchment paper to roll out the dough. Place the dough between a large sheet of parchment paper, fold in two and roll out to the size of your available baking sheet or pan. Bake the dough between the parchment paper. See video for further clarification.

INGREDIENTS
5-6 Fruit Marshmallow, ½ cup of Milk Chocolate Chips, ½ cup of Eurocreme, Nutella, Banana Chocolate Spread, ¼ cup of finely grounded Granola, ¼ cup of Sprinkles and candy mix, ¼ cup of Smarties or M&M’s
ALTERNATE INGREDIENTS
Any Marshmallow, Milk, Dark, Butterscotch or chips, Use your favorite Spread, Granola or rice cakes, Smarties, M&M’s, Reece's pieces, candy sprinkles, ground cocoa or chocolate biscuit
INSTRUCTIONS
Step 1. Take 1 Marshmallow – add a table spoon of water and microwave for 10 secs. Mix the well.
Step 2. The other 5 Marshmallow – cut into three pieces each. Alternate colours will be used later. Spread the melted marshmallow on one side and place that side into the cupcake cup.
Step 3. Add some chocolate chips, chocolate spread, smarties, sprinkle some granola, sprinkle some chocolate biscuits
Step 4. Cover all the ingredients with an alternative colour marshmallow
Step 5. Melt ¼ cup of the chocolate chip in a microwave for 20 secs or over a boiling pot of water. Pour the melted chocolate over the marshmallow in the cup and decorate with sprinkles & candy
SERVE WARM / COLD
Heat oven at low temperature for 30 minutes. Turn off the oven. Place the marshmallow cups on a flat baking pan and place in the warm oven for a few minutes. Marshmallow will puff up slightly when it’s done.
For a cold gooey treat, put in the freezer for a few minutes after it’s cooled down from the oven.

24 HRS PREP TIME FOR BRINE
WASH THE CHICKENS WINGS IN COLD WATER BEFORE ADDING THEM TO THE BRINE
Created a brine with 2 quarts of cold water, 6 garlic cloves, 3-4 Thyme (Cuban Thyme) leaves, a teaspoon of lemon juice and ½ cup of sea salt. Add the chicken wings to the brine and leave them in the refrigerator overnight.
USING A FOOD PROCESSOR (OR GRIND OR CHOPPED FINE)
5-7 Habanero Pepper (Alternative options: Chilli Peppers, Ghost Peppers, Black Pepper)
2 large onions
2 chilli pepper
1 Medium - fully ripe Mango (Alternative options: Pine Apple, Peaches, Oranges)
A pinch of salt
24 HRS PREP TIME FOR CHICKEN WING MARINATE
Take the chicken out of the brine and add ¼ of the mix to marinate the chicken and place the chicken wings back into the refrigerator. For best results refrigerate with the seasoning for another 24 hours.
DIPPING SAUCE
Cook the rest of the mix slowly for about 30 minutes, and let it cool down before refrigerating. The dipping sauce can be used as a rub before adding the wings to the BBQ.
OVEN INSTRUCTIONS
Pre-heat at 350 for 30 mins – Bake at 350 degrees and grill on High
1st 20 mins – Bake chicken wings on parchment paper
2nd 20 mins – Place the chicken wings directly on the grill rail and grill on high heat
BBQ INSTRUCTIONS
BBQ for 10 – 15 mins
OR continue grilling the wings in the oven for another 10 -15 minutes until they are fully cooked.
