Gluten Free Dairy Free Cream of Mushroom Soup

Cream of Mushroom soup is found in tons of Southern casserole recipes so I had to find a good, dairy free, gluthen free recipe that I could adapt to substitute for cream of mushroom soup. This is it! Gather your ingredients and cook with me!

Ingredients:
1 T Olive Oil
3/4 lb chopped fresh mushrooms
1/2 large chopped onion
1 minced clove of garlic
1/2 t sea salt
1/2 t white wine vinegar
1/4 t dried thyme
1/4 t fresh cracked black pepper
3 T arrowroot
2 c unsweetened almond milk
