Gluten Free, Dairy Free, Vegan, Creamy Sweet Potatoe Soup

Yummy Creamy Fall soup! To make it vegan substitute chicken broth for vegetable broth. Gather the ingredients and cook with me!

Ingredients:
2 T olive oil
1 small chopped onion
4 sweet potato
3 stalks chopped celery
2 cloves garlic
1 t thyme plus some to finish
2 t sea salt
1 t fresh cracked pepper
1 t paprika
1/2 t cinnamon
4 cups of stock - chicken or vegetable
butter flavored olive oil to finish

Those that can have dairy, add fresh grated parmesan cheese to finish.
