#### **Samagri (Ingredients)**

##### **Pakoda ke liye:**
- Besan (Gram Flour) - 1 cup
- Pyaaz (Onion), finely chopped - 1
- Hara Dhania (Coriander Leaves), chopped - 2 tbsp
- Hari Mirch (Green Chili), chopped - 1-2
- Haldi Powder (Turmeric) - 1/4 tsp
- Lal Mirch Powder (Red Chili) - 1/2 tsp
- Namak (Salt) - swadanusar
- Baking Soda - 1 pinch (optional, for fluffiness)
- Tel (Oil) - deep frying ke liye

##### **Kadhi ke liye:**
- Dahi (Curd/Yogurt) - 2 cups (khatta ho to aur achha hai)
- Besan - 4 tbsp
- Haldi Powder - 1/2 tsp
- Lal Mirch Powder - 1 tsp
- Adrak (Ginger), grated - 1/2 inch
- Curry Patta - 7-8
- Rai (Mustard Seeds) - 1 tsp
- Methi Dana (Fenugreek Seeds) - 1/2 tsp
- Hing (Asafoetida) - 1 pinch
- Pani - 3-4 cups
- Tel ya Ghee - 2 tbsp
- Namak - swadanusar

### **Vidhi (Method)**

#### **1. Pakoda Tayaar Karna:**
1. Ek mixing bowl mein besan, haldi, lal mirch, namak, pyaaz, hara dhania, aur hari mirch daal kar achhi tarah mix karein.
2. Isme thoda-thoda paani daalte hue ghadha batter banayein (it should not be too thin). Agar fluffiness chahiye to baking soda mix karein.
3. Ek kadhai mein tel garam karein aur batter ke chhote-chhote portions pakodon ki tarah deep fry karein. Pakode golden-brown hone tak tal lein.
4. Pakode nikal kar tissue paper par rakhein taaki extra tel nikal jaye.

#### **2. Kadhi Banane ki Tayari:**
1. Ek bowl mein dahi aur besan ko achhi tarah se phent lein, taaki lumps na banein. Phir isme haldi, lal mirch aur namak milayein.
2. Is mixture mein 3-4 cup paani daal kar ek consistency banayein.

#### **3. Kadhi Ka Tadka:**
1. Ek kadhai mein tel ya ghee garam karein.
2. Isme rai, methi dana, curry patta aur hing daal kar chhonk lagayein.
3. Ab grated adrak aur thoda lal mirch powder daal kar halka sa bhunein.

#### **4. Kadhi Pakana:**
1. Ab tadke mein dahi-besan ka mixture daal dein aur hamesha chalate rahein taaki kadhi mein lumps na banein.
2. Kadhi ko medium flame par 15-20 minute tak pakaayein jab tak woh achhi si khushboo aur desired thickness na le le.

#### **5. Pakode Milana:**
1. Kadhi mein fry kiye hue pakode daal dein aur 5-7 minute aur pakaayein taaki pakode kadhi mein achhi tarah soakh ho jayein.
