Dr Stephen Phinney, 1970s med school in SF Bay Area,
carb-loaded before long bike rides...
-discussed Atkins Diet with colleague while in Vermont
-on cross-country ski tour, had to stop & eat every hour
-but, Atkin's guy did not have to stop & eat at all
-thought he had to have been sneaking in carbs

So, decided to study the diet...
Did study on obese patients, low cal keto diet, 6 weeks,
as they lost weight, had to wear backpack of weight they
had lost & walk on elevated treadmill
By end of study, they were performing better than before
even with the backpack
With colleagues, did study: highly trained bike racers
-fed enough fat so did not lose weight
-after 4 weeks, performance was SAME
using body fat and 10% energy from
body carb reserves

Then, a disastrous diet using liquid protein set the keto
movement back to square one...
2003, met with Dr Jeff Volek who had begun doing low-carb
research
Their work focused not on performance using keto, but
long term safety of using keto, first published in 2006
Then, could offer keto as science-based program

Sami Inkinen, athlete & entrepreneur, had pre-diabetes,
had used processed high carb in endurance training...
Created Virta Health study with the late Dr Sarah Hallberg
-260 T2D patients
