In adults, we don't have huge experience in long term use
of ketogenic diets...
-for 30 years, did not promote long term keto diet
-we knew that many aboriginal cultures had eaten keto
-we know quite bit about Inuit & Masai re food intake
-for Native American buffalo hunters, it is said that the
women, when pregnant, ate many gathered foods
-perhaps to get extra magnesium, potassium, phosphorus
-also, fear of fat from government
recommendations was prevalent

Working with Jeff Volek, from 2003 to 2010, researching
saturated fat--found that when keto adapted, can burn
2X amount of fat for energy, both during rest & exercise
In highly-trained high carb-eating athletes, their highest
fat oxidation was less than 1g fat per minute at their peak
energy burning during exercise...
Same person, once adapted to keto eating [for 6 months]
can burn fat at 2g per minute
-like racing 4 cylinder vs 8 cylinder car

Body prefers saturate and mono-unsaturated fats for fuel...
sat fats do NOT BUILD UP due to being used for fuel!
-when exercising, asleep, walking, etc
NOT: you are what you eat...but:
you are what you save from what you eat
-take blood sample and check on level of sat fat
-after a decade, those with highest level have more T2D,
heart disease, mortality
Because ketosis 2X body's ability to burn body
fat--protecting body from sat fat buildup

Therefore: purposely feeding people 3X sat fat in diet, for
12 weeks, vs low fat diet [1/3 sat fat level]
Result: Keto eaters: had LOWER BLOOD SAT FAT LEVEL
