Day 03

So here on day 3 of our ginger bug, we are feeding it. Our yeast is starting to form, and we have bubbles forming, not a lot, but some are visible. This is a good indication that yeast is forming and fermentation has begun. There is still a lot of room for failure even though we are on day 3 of 4.

The point in natural fermentation is to create the right environment to promote growth of a specific yeast, in the wild. This will yield a better, more subtle flavor as opposed to a barm yeast. Given the whole wheat, there are some not so proper yeasts that can grow if the starter does not establish the right yeast. You want to avoid the risk of Ergot or Ergot poisoning.
