Jamaican Banana Bread Recipe
Ingredients
Bread
2 tbsp unsalted butter, softened
2 tbsp cream cheese
1 cup white sugar
1 egg
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 cup mashed overripe bananas
1/2 cup milk
2 tbsp dark rum, or rum flavoring
1/2 tsp lime zest
2 tsp lime juice
1 tsp vanilla extract
1/4 cup chopped toasted pecans
1/4 cup flaked coconut
Topping
1/4 cup brown sugar
2 tsp unsalted butter
2 tsp lime juice
2 tsp dark rum, or rum flavoring
2 tbsp chopped toasted pecans
2 tbsp flaked coconut
Directions
Preheat your oven to 375°F (190°C) and lightly grease two loaf pans.
Beat together softened butter and cream cheese until fluffy. Gradually add sugar and beat until incorporated, then mix in the egg.
In another bowl, whisk together flour, baking powder, baking soda, and salt. In a third bowl, combine mashed bananas, milk, rum, lime zest, lime juice, and vanilla extract.
Add 1/3 of the flour mixture to the butter mixture and mix. Stir in 1/2 of the banana mixture. Repeat with the remaining flour and banana mixtures. Fold in pecans and coconut flakes.
Pour the batter into the loaf pans and bake for about 1 hour or until a toothpick inserted comes out clean.
Let the loaves cool for 10 minutes, then transfer to a wire rack.
For the topping, simmer brown sugar, butter, lime juice, and rum in a small saucepan over medium-high heat until smooth. Stir in pecans and coconut. Spoon the topping over the loaves while they’re still warm, allowing it to set as the bread cools.

Simple Chicken Casserole
Well nieces and nephews, tonight I'm making a super simple Chicken and Rice Casserole. This Chicken Casserole is so simple it's almost a crime. It uses Cream of Mushroom, Cream of Celery, and Cream of Chicken soup base as well as Instant Rice. Total time to assemble can be as little as 10 minutes, it is easy on the budget, and a big plus, it tastes amazing enough my family requests it often. It takes about an hour to an hour and fifteen minutes to bake. You can also add frozen vegetable including broccoli as an upgrade. Top it with some french fried onions and serve warm with a roll or biscuit.

Ingredients
4 Cups Chicken in Small Chunks
2 cups water
2 cups instant white rice
1 (10.75 ounce) can cream of chicken soup
1 (10.75 ounce) can cream of celery soup
1 (10.75 ounce) can cream of mushroom soup
salt and ground black pepper to taste
1/2 cup butter, sliced into pats
Instructions
1. Preheat the oven to 400° F and Grease sides and bottom of a 13"x9" casserole dish.
2. In a large mixing bowl, stir together the chicken, water, rice, salt and pepper, cream of chicken soup, cream of celery soup, and cream of mushroom soup together and pour into in the prepared casserole dish.
3. Arrange the butter evenly over the top of the chicken mixture.
4. Bake in preheated oven until the rice is tender and the chicken is cooked through, 1 hour to 1.25 hours. Cool 10 to 15 minutes before serving.

2 cup canned pineapple juice
1 1/2 cup packed brown sugar
2/3 cup rice vinegar or apple cider vinegar
6 tablespoons ketchup
4 tablespoons soy sauce or tamari
For the Cornstarch Slurry:
1 1/2 tablespoons cornstarch dissolved in 2 tablespoons water
INSTRUCTIONS
Place all the ingredients, except for the cornstarch slurry, in a small saucepan and bring to a boil. Stir in the cornstarch slurry and simmer for another minute until thickened, stirring constantly.
Let the sauce cool completely and store in an airtight container in the refrigerator for 2-3 weeks.

It’s not the tastiest meal in the world, but it can be made better than a frozen box meal if you know what to do. I will teach you how to make Salisbury steak, including how to make a no-fail gravy. The trick to making it kick is using instant coffee in the gravy, and here is another tip, use bullion not broth for the stock. I use ground beef, but for those that do not eat beef, you can use ground turkey or chicken, though beef bullion is used for the gravy, so I do not know how to change that and not completely change the meal.

1 Lbs Ground Beef
1/4 Cup of bread crumbs
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
Salt to Taste
Pepper To Taste
8 Oz sliced mushrooms
2 Cups Water
2 tsp Beef Bouillon
1 tsp Instant coffee
3 TBSP corn starch
Into a bowl, ground beef, bread crumbs, garlic and onion powder, then salt and pepper to taste. Form equal-sized patties.
Oil a heavy skillet or use a dutch oven large enough for everything to fit, sear the patties and cook to medium rare to medium by preference of finished dish.
dice up the mushrooms, add them to the pan, and cook to the desired texture. Remove meat and Mushrooms to a bowl or dish and set aside for now.
In a large bowl or measuring cup water, bouillon, instant coffee, and corn starch. Whisk until smooth and add to the hot pan, bring to a boil while whisking constantly. Gravy should thicken quickly, reduce heat and add back the patties and cooked mushrooms, let simmer 15 to 20 minutes to medium mell to well done.
Serve.

Meatballs and Gravy
Ingredients
To make the meatballs, you will need
1 pound Ground Beef
1 tsp Salt
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/4 tsp Black Pepper
1 Egg, slightly beaten
1/4 cup Plain Bread Crumbs
Oil for frying
To make the gravy, you will need
3 TBSP Butter
3 TBSP Flour
2 cups Beef Broth
1/2 cup Half & Half
Instructions
Make the meatballs
1. Place the ground beef in a large bowl. Add the salt, garlic powder, onion powder, black pepper, egg, and bread crumbs. Mix the ground beef with your hands until all the ingredients are incorporated.
2. Form the ground beef into rounds, just a little smaller than a golf ball. Makes approximately 20 meatballs
Brown the meatballs
1. Add enough oil to a large, deep skillet to cover the bottom (about 1 1/2 TBSP).
2. Heat the oil over medium-high. When the oil is hot, carefully place the meatballs in the oil. Fry them, turning a couple of times to brown on all sides, for about 5-6 minutes.
3. Remove the meatballs to a plate or bowl, set aside for now.
Make the gravy
1. Drain most the oil from the skillet, but do not wash or wipe. If there are bits on the bottom of the pan, leave them in there. They will flavor the gravy.
2. Place the skillet over medium heat and add the butter. When the butter is melted and foamy, add the flour. Cook the flour, stirring frequently, for 2 or 3 minutes.
3. Slowly add the beef broth and stir until combined, and bring the sauce to a simmer.
4. Add the meatballs to the gravy and lower the heat to medium-low.
5. Cover the skillet and cook the meatballs for 15 minutes, stirring occasionally.
6. Add the Half and Half and stir well.
7. Lower the heat to low, cover, and continue to cook for 3-5minutes to let the flavors combine and heat through.
8. Taste the gravy and add a little salt if needed.
9. Serve with the meatballs and gravy over pasta, mashed potatoes, or on their own.

Ingredients:

5 tbsp all-purpose flour
2 1/2 cups water

2 tsp chicken bouillon
1 tsp garlic powder
1 tsp onion powder

Directions:
Step 1
Melt the butter in a skillet over medium heat, whisk in flour to form a thick paste. Continue cooking, whisking constantly,
cook at least 30 seconds to 3 minutes.
Step 2
Mix bouillon into the water, then wisk into the roux. Add garlic and onion powder, bring to a boil. Continue to wisk until thickened to gravy consistency, 8 to 10 minutes. Pepper to taste.
