Easy & delicious Curry Fried Rice for you! Basmati rice stir fried with curry powder, soy sauce, chili paste, mushrooms & broccoli . Complete Recipe with Ingredients below.

Ingredients:
1 cup uncooked basmati rice - will yield 2.5 cups of cooked rice
2 tbsp cooking oil
250 grams baby bella/brown mushrooms - sliced
100 grams broccoli florets
1 tbsp curry powder
2 tbsp soy sauce
1 tsp chili paste
1/4 tsp sesame oil
3 scallions/spring onions - thinly sliced into roundels

Cooking instructions:
Soak 1 cup of uncooked basmati rice in water for 30 minutes. Drain water
In a pressure cooker cook 1cup of basmati rice with 2 cups of water
Alternative you can cook rice in a sauce pan
Once rice is cooked transfer to plate and let cool for 2 hours or more
Next in a preheated saucepan or wok add cooking oil
Once oil is hot add mushrooms & broccoli. Stir fry for 2 minutes
Season with curry powder. Mix well then add soy sauce & chili paste
Stir fry for 1 more minute than add cooked rice
Mix well so that rice is coated well
Add half the scallions, stir fry for 30 seconds then transfer to serving dish
Garnish with remaining scallion slices
