Zesty Mini Key Lime Pie - No Eggs, No Baking

These quantities will make 3 desserts.
The whole process takes about 20 minutes.
Best eaten after 2 or 3 hours of refrigeration.

Ingredients:
4 to 6 wholewheat biscuits or Graham crackers
Whipping cream (30%) - 1/3 cup (70 ml)
Condensed milk - 1 cup (225 grams)
Mascarpone cheese - 1/2 cup (100 grams)
2 limes
Vanilla extract - 1/2 tsp (2.5 ml)
Whipping cream to decorate - about 1/4 cup (60 ml)

Method:
Use a blender to crush the biscuits into crumbs then press a few teaspoons of them into ramekin dishes or similar.
Roll the limes under the palm of your hand to make them easier to squeeze.
Grate a tablespoon (15 ml) of lime zest then halve the limes and squeeze out 1/4 cup (60 ml) of juice.
Place the cream, condensed milk, mascarpone cheese, lime juice and zest, and vanilla extract in a large bowl and whisk to soft peaks.
Spoon the creamy lime mixture over the biscuit crumbs, filling the pots to the brim, then level with a knife.
Whip about 1/4 of a cup (60 ml) of whipping cream and pipe onto the top of each dessert, then garnish each with a sprinkling of lime zest.
