The Authentic Iranian Sour Kebab Recipe:
Ingredients for 2 servings:
• 750 grams of lamb meat
• 400 grams of mixed herbs, including parsley, coriander, mint, tarragon, basil
• 400 grams of pomegranate seeds
• 400 grams of walnuts
• 2 large onions
• Spices including: pomegranate seeds, sea salt, garlic paste, sumac, red pepper, golpar (Angelica powder), salt, black pepper, paprika - each one tablespoon
• 3 tablespoons of pomegranate paste
• 1 cup of vegetable oil
Instructions: For marinating the authentic Northern Sour Kebab:
1. First, pour the pomegranate seeds into a blender.
2. Then add the mixed herbs.
3. Next, add the walnuts.
4. After that, add the onions.
5. Now, sprinkle the spices, including pomegranate seeds, sea salt, garlic paste, sumac, red pepper, golpar, salt, black pepper, paprika.
6. Pour the vegetable oil and mix all the ingredients together.
7. Finally, add the pomegranate paste and mix it with all the ingredients.
8. Mix everything together and let it rest for 3 hours. Then skewer the meat and grill the kebabs.
