Potato Stuffed Kuku (Persian Potato Frittata):
Ingredients: For the potato mixture:
• 5 medium-sized boiled potatoes
• 1 egg
• 2 tablespoons wheat flour
• 1 teaspoon baking powder
• 1 teaspoon salt
• 1 teaspoon black pepper
For the kuku mixture:
• 2 caramelized onions
• 10 mushrooms
• 1 egg
• 1 teaspoon baking powder
• 1 teaspoon salt
• 1 teaspoon black pepper
• 1 teaspoon paprika
• Mozzarella cheese
• Some breadcrumbs for coating
• Oil for frying
Instructions:
1. Boil the potatoes until tender. Meanwhile, finely chop the onions and sauté them in a pan over low heat until caramelized. Add the mushrooms, chopped, to the onions along with the spices. Remove from heat once browned.
2. Mash the boiled potatoes well and add the spices and wheat flour. Mix in the egg and combine thoroughly. The resulting mixture should be slightly firm.
3. Take a spoonful of the potato mixture and shape it into a ball. Stuff it with some of the onion and mushroom mixture and a bit of mozzarella cheese. Seal the ball and coat it in breadcrumbs.
4. Heat oil in a frying pan and fry the stuffed potato balls until golden brown on all sides.

Note:
Fry over low heat until golden brown.
If the dough sticks to your hands, add a little wheat flour and dampen your hands with a little water before handling the mixture. This way, it won't stick to your hands anymore.
