Shah Abbas Gheimeh - An Authentic Iranian Dish
In my opinion, it's one of the most delicious dishes 😋
Ingredients for 3 servings:
• 300 grams ground lamb
• 3 cups rice
• 1 cup lentils
• 2 onions
• 2 tablespoons tomato paste
• 1 teaspoon turmeric
• 1 cup brewed saffron
• 1/2 teaspoon dried lime powder
• 1/2 teaspoon black pepper
• 1/2 teaspoon cardamom powder
• 1 cinnamon stick
• Some dried rose petals or rose water
• Barberries, sliced almonds, and sliced pistachios for garnish
Instructions:
1. Sauté the onions in oil until golden, then add turmeric. Next, add the ground lamb along with half-cooked lentils and sauté.
2. Add tomato paste and spices, then add the cinnamon stick, cardamom, and rose petals, followed by 2 cups of boiling water. Simmer over low heat for 2 hours until fully cooked and thickened.
3. Remove the cinnamon stick towards the end of cooking, then add salt, half a cup of brewed saffron, and rose water.
4. Spread the drained rice on the bottom of a pot and layer it with our mixture, then add the remaining saffron and oil on top. Let it simmer over low heat for about half an hour.
5. For garnish, sauté the barberries with a little butter and sugar, then add sliced pistachios and almonds. Sauté for 1 minute and use for decoration.
