This recipe for Thai fried pork ribs can be prepared the previous evening and cooked briefly right before serving. These deep-fried spare ribs are the ideal vehicle for the seductive flavors and fragrances of coriander and garlic.
To keep my fried pork ribs light and crisp, I like to cook them with corn starch, but if you don't have any, you can alternatively fry them with all-purpose flour.
