Making Del Taco's Taco Meat and Refried Beans at Home

Everyone knows Del Taco has the best meat and beans. This is how to make them at home. Enjoy!
Del Taco Seasoned Ground Beef recipe

Taco Meat Ingredients
1 lb ground beef
¼ cup Texturized Vegetable Protein, TVP (optional)
¼ cup boiling water (for TVP)
1 cup water, for the meat
1 tbsp Dried Minced Onions
1 tbsp Chili Powder
1 tsp Paprika
1 tsp Cumin
1 tsp Garlic Powder
¼ tsp Cayenne Pepper
1 tsp Salt
1 heaping tbsp Tomato Paste
½ tsp Sugar
¼ tsp of Citric Acid or 1 tsp Fresh Lime Juice

Thickeners
1 tbsp Oat flour (ground instant oatmeal)
1 tbsp Masa Harina
1 tbsp AP Flour

Refried Beans Ingredients
1 can Pinto beans
¼ cup Grated White Onion
½ tbsp vegetable oil
½ tsp Cumin
½ tsp Garlic Powder
½ tsp Paprika
½ tsp Salt
Pinch of Citric Acid or ¼ tsp Lime Juice

Taco Meat

1) Soak ¼ cup TVP in ¼ cup of boiling water. Mix well and set aside
2) Brown 1 lb of ground beef until all the pink is gone. Do not drain
3) Put cooked ground beef in a food processor (carefully not getting grease in the food processor) and pulse around 4 times to chop up the beef, Set Aside for now
4) Put frying pan with beef grease back on the heat and add Thickeners to the grease. Stir well for about 1 minute to cook the flour to make a “Roux”
5) Add seasoning and minced onions to the pan and stir until is is all incorporated into the “Roux”
6) Add 1 heaping tablespoon of tomato paste and mix well.
7) Add 1//2 cup of water and mix well. Keep adding water until you get a “gravy” like consistency
8) Add Citric Acid or Fresh Lime Juice and stir in a little
9) Add you TVP mixture and ground beef to the pan and mix well to combine it all very well.
10) Cover and let simmer on lowest heat for about 10 minutes

Refried Beans
1) Drain 1 can of pinto beans in a colander over a large bowl. Keep juice for later
2) Heat ½ tbsp of vegetable oil in a 2 quart sauce pan
3) Add ¼ cup grated white onion and cook about 1 ½ minutes until onion starts to brown slightly
4) Add bean to the pot and ½ tsp each of Cumin, Garlic Powder, Paprika and Salt. Stir well
5) Add Citric Acid or Lime Juice and let simmer on medium low heat for about 3 minutes
6) Mash beans with waffle style potato mashed, leaving a small portion of the bean untouched.
7) Add drained bean liquid to the beans to get the desired consistency. Let simmer on low heat about 5-7 minutes.
