In this video, I’m going to share with you my delicious recipe for short bread cookies. Short bread cookies are one of Karen Berg’s most favorite cookies. These are fantastic, especially around the holidays. They also go great with a cup of tea. It’s a classic recipe that’s crumbly and delicate. This is a super simple and easy recipe that’s keto-friendly and has no sugar. 

Short bread cookies:

Ingredients
• 1 cup almond flour
• 3 tbsp soft butter, cut into small bits
• 3 ½ tbsp confectioner- sugar substitute (use a coffee grinder to powder.)
• 1/8 tsp salt
• ½ tsp vanilla
 
Directions for Baking Shortbread Cookies
1. Preheat the oven to 350 degrees F before you begin. 
2. In a medium bowl, put almond flour (instead of all-purpose flour), salt, powdered sweetener substitute, and mix.
3. Add chunks of butter and mix well. You can use a stand mixer, but your hands will do, to mix and pinch in the butter until well-blended. 
4. Next, add vanilla. 
5. Then, knead the dough into one big ball. 
6. Pinch off chunks and roll into balls, about 1 inch in diameter, and place on a parchment or silicone matt lined pan. Press the balls slightly with the palm of your hand so they would be ½ - ¼ inch thick. 
7. Bake at 350 degrees F for 8-10 minutes. Be sure to pull them out before they turn brown. 
This recipe does not make a lot of cookies, so you may want to double or triple it. Enjoy!
