Sturgeons, part of the Acipenseridae family, are fascinating fish with a history dating back to the Late Cretaceous, around 174 to 201 million years ago. They possess unique features like a shark-like caudal fin, smooth-scaled bodies armored with bony plates called scutes, and can grow up to 2-3.5 meters (7-12 feet) long. Sturgeons are primarily found in rivers, lakes, and coastlines of Eurasia and North America, inhabiting both freshwater and marine environments. However, their popularity as a source of caviar has led to severe overexploitation, pushing many species to the brink of extinction.
