Spicy Cajun Pasta with Chicken and Sausage

This is one of my wife's favorites, so you know what that means. I have put in some work to make this dish really yummy for her. It all comes down to the sauce. The wine, heavy cream and just the right amount of spice. Not too much but you have to know it's there. In this video I'm using a very spice Hot Link BBQ sausage so that adds a lot of heat. If you are using an Andouille or other type of sausage you will need to add some extra Creole Seasoning or Red Pepper Flakes to bring the heat. Either way, taste as you go to get it to the level you are happy with. Then you just add some veg, some chicken and some pasta and you have an amazing meal on your hands. Enjoy!

Cajun Pasta recipe

1 lb Chicken Breast or thighs, Seasoned and grilled preferred
2 Hot Links or Andouille sausage, grilled
1 Red Bell Pepper, sliced up into bite size pieces
1 Zucchini, sliced into 3.8” wide half moons
¼ of a Red Onion, in slices
4 Cloves Garlic, Minced
½ Cup White Wine (good drinking wine)
1 ¼ Cup Heavy Cream
½ cup Chicken stock or Pasta Water
1 tsp Soy Sauce
1 tbsp Olive Oil
1 ½ tbsp Butter
1 ½ tbsp AP Flour
Cajun Seasoning, store bought or recipe below
Red Pepper Flakes (to adjust spice)
Fettucini Pasta, cooked Al Dente
Salt and Pepper to Taste

Creole Seasoning

2 tsp Paprika
1tsp Garlic Powder
1 tsp Onion Powder
1 tsp Chile Powder
½ tsp Cayenne Pepper
1 tsp Dried Oregano
1 tsp dried Thyme
1 tsp Salt
1 tsp Ground Black Pepper
