My Baked Pasta, Not Baked Ziti and Sorta'ish Lasagna Recipe

I have been making this meal for many years and I still don't have a great name for it. It is sort of like Baked Ziti except is uses Penne, not Ziti. It has elements that remind you of Lasagna but it is nothing like Lasagna. I just call it the Pasta Bake and I call it delicious. It's got a few steps to it but it is a lot easier than lasagna and way better than a Baked Ziti. Here are all the things you need to make it

Pasta Bake
1 lb Meatballs, cooked
1 lb Italian Sausage, cooked
¾ box Penne Pasta, cooked
1 lb Mozzarella cheese
Sauce (see recipe below) or 2 jars tomato based pasta sauce
Ricotta Cheese Mix (see below)
Parmesan and/or Romano Cheese (as much as you like or don't like)

Tomato Pasta Sauce

1 28 oz can whole (chopped up) or crushed San Marzano style tomatoes
1 28 oz can Tomato sauce
1 6 oz can tomato paste
1 onion, diced (about 1 cup)
5 cloves chopped or pressed garlic
5 Fresh Basil leaves, chopped fine(or 1 tbsp dried basil)
1 tbsp fresh chopped oregano or 1 tsp dried oregano
2 tbsp sugar (or 1/3 cup red wine +1 tsp sugar)
1 tbsp olive oil
1 tsp salt (adjust to taste)

Meatballs
1 lb ground beef
1 egg
1/3 cup panko bread crumbs
up to 3 tbsp milk
1/4 cup grated yellow onion
1 large clove of garlic, minced
1 ½ tbsp Parmesan cheese
1 tsp dried oregano
dash of salt and pepper
up to 1 tsp red pepper flakes (optional, for heat)

Ricotta Cheese Mixture

1 cup Ricotta cheese
1 egg
1/3 cup Grated Parmesan Cheese
1 tsp Dried Basil
1 tsp Dried Oregano
