They are soft lemon cookies that i made totally egg-free -i used instead cream cheese. Also i used wholemeal flour and healthy sugar-free sweetener which makes them diabetic friendly and guilt free.

This is a very quick and simple recipe with very few easy ingredients.
They are soft cookies without eggs, i used instead cream cheese.

No sugar either, i used a mix of xylitol and erythritol, so fairly guilt- free and diabetic friendly too.

Full Recipe:
270 grams of wholemeal flour
200 grams of cream cheese
200 grams of unsalted butter
200 grams of low glycemic sweetener (100g each of xylitol and erythritol)
The zest of a small lemon or half a big one
1 teaspoon salt
1 teaspoon soda bicarbonate

Chill dough for 1 hour in the fridge or 15 minutes in freezer before baking.

Bake in a 190c (375 F) pre-heated oven for 11 to 15 minutes or until golden brown at the edges.

With this dosage, i made 4 mini doughs that i shaped in cylinder form and each one should give between 10 to 15 slices - depending on thickness
