Sparkling Coconut water KEFIR with red grape juice |1st & 2nd fermentation| Part 1

Super fizzy sparkling red grapes juice, coconut water kefir "soda pop" like. Step by step 1st & 2nd Fermentation.

For the 1st fermentation I use 40 g of water kefir grains per each litre of coconut water, Today, I am doing 2 litres of coconut water with 80g of kefir grains (split in two jars).
Stir gently with wooden or silicon spoon . Optional: add few dates for extra vitamins/minerals.

Close the lids loosely & cover the jar completely with a cloth, Leave them to ferment for 2 days if hot or 3 days if cold. 2 days later. see lots of bubbles? This means the grains have eaten most of the sugars.

The 1st fermentation is complete now. You can drink this now and enjoy the probiotics, but I am using about a cup of organic cold pressed pure red grape juice for the 2nd fermentation.

We need flip-top bottles for the fizziness, jug, not metal sieve & spoon.
Stir gently before pouring in jug and remove the dates if you have used them.
The dates are completely depleted & bland, but can be added any baking for the fiber value.

The grains have weakened a bit, so they need a sugar only feeds - preferably with organic and raw cane sugar.

These grains will need a pure sugar feed to stay healthy. A card link on how to it should also appear on top right

Here's 1st fermentation, ready to drink as is, but not very tasty, that's why i bottle it with grape juice & do the 2nd fermentation

The 2nd fermentation makes the kefir fizzy & turns it in to the healthiest most delicious, refreshing, incredibly alive & kicking probiotic soda pop.

I like to add raw honey too for its healthy enzymes & for even extra fizziness, about 1 teaspoon per bottle, but this is completely optional.

Do the lids up & shake the bottles so that honey flows around.

Important: Once the flip-top lids are on, you must place them in the fridge as soon as possible, to slow the fermentation process. As if you walk away & forget about them for a while (like I did once) the bottles might pop & smash. It happened in the summer, I left them out overnight, a lot gas was created in the heat and made the bottle smash.

The longer 2nd ferment kefir is left in the fridge the fizzier it becomes.

This is 5 days later, And voila', super fizzy, extremely refreshing, delicious & healthy amazing probiotic drink for the whole family, such goodness…
