Sweet Potato Black Bean Tacos

Savory with hints of lime, these easy sweet potato black bean tacos are a filling and flavorful vegan dinner recipe.

Ingredients
1 sweet potato
1 tsp of olive oil
1/4 tsp of black pepper
1/2 tsp of chili powder
1/2 tsp of onion powder
8 oz of canned black beans
2 whole wheat tortillas
2-4 kale leaves
1/2 cup of grape tomatoes
1 lime

Directions
1. Preheat oven to 350F.

2. Skin sweet potato and slice into small wedges. Drizzle with olive oil and sprinkle with black pepper, chili powder, and onion powder. Mix well.

3. Bake for 40 minutes, flipping after 20 minutes.

4. Rise and strain 8 oz of canned black beans. Add to a bowl and mash until smooth. Set aside. Slice tomatoes and set aside.

5. Remove sweet potatoes from oven and let cool.

6. To assemble tacos, start with 2 whole wheat tortillas. Layer with 1-2 kale leaves on each tortillas. Portion 4 oz of mashed black beans onto each taco. Top with sweet potatoes and tomatoes. Drizzle with the juice of 1 lime.

7. Serve and enjoy!
