PERFECT Keto Lasagna Recipe

Eggplant is an Italian staple. So is lasagna. This means we have to combine the two. This low carb pasta recipe is keto and amazing.

THE RECIPE:
1 large american eggplant
1 cup ricotta cheese
1 medium egg
1 lb ground beef
1 cup chopped mushroom
3 tbsp marinara (sugar-free)
1/2 cup chopped onion
4-5 cloves minced garlic
Sea Salt and Pepper
toppings (I choose mozzarella, parmesan, and basil)
1) Peel and slice the our "keto lasagna noodles" aka eggplant slices very thin. Then lay them out flat and cover both sides with salt. This will draw out the water and stiffen-up the slices. Let sit for 20 minutes and pat dry with a paper towel when done.
2) While waiting for step 1 to finish, start cooking the beef. Add some oil to a heavy pan. Crank the heat up to high. Add the beef, onions, mushrooms, and garlic all at once and stir until browned. take off the heat.
3) In a medium mixing bowl combine ricotta and egg. Mix until smooth.
4) Take one spoon of the marinara sauce and thinly cover the bottom of a glass casserole dish. Layer on the eggplant slices. layer one scoop of ricotta, a few scoops of the beef (draining the liquid first) Layer another layer of eggplant and repeat until the top layer is just eggplant.
5) Spread a thin layer of marinara on the top layer of the eggplant. and add toppings. I choose mozzarella, parmesan, and basil.
6) Bake at 400F for 30-40 minutes until the top has browned. take out and rest until all the liquid stops bubbling and recedes back into the lasagna. If any remains simply drain.
7) Slice into quarters top with more basil and enjoy!

I've been making this simple keto recipe every morning for breakfast. Seriously. I bought 3 bags of these "cauliflower pearls". Bits and pieces bacon cuts are super cheap and make for a simple, quick, keto, way to add nice little crunchy pockets of flavor in your dish.

I hope you have a go-to recipe. The diet can be hard enough. It's easy to fall back into old eating habits so it's nice to have an easy recipe you can whip out in 10 minutes that satisfies.

Easy Keto Dessert. This sugarfree cookie recipe tastes SO GOOD! Very cheap dessert, quick keto cookie. Peanut butter cookie!
The peanut butter I used (https://amzn.to/2JdA0jv) has 2 net carbs per tbsp. This comes out to about 1 net carb per cookie.
Recipe:
1 cup - Natural (sugar-free) Peanut Butter
1/2 cup - Sugar replacement (1:1 ratio to sugar replacement like Swerve)
1 - med Egg
1) Mix all ingredients in a bowl.
2) Using a tbsp as a scoop, portion out the cookies by rolling into balls and placing on a parchment lined tray.
3) Press down with a fork to create a crosshatch pattern. Bake at 350 F. for 10-12 minutes.
4) Cool and enjoy!

Whenever I have mince in the freezer I always tend to make bunless burgers, so quick and so easy! and did I mention DELISH! It's pretty much a carb free burger. You can add whatever you like to your burger but below is a list of ingredients I used. Ingredients:
Meat Pattie :
- Mince meat of your choice
- Seasonings that being S + P, Garlic Powder, Garlic & Herb Salt, Mixed Herbs
- 1/2 Onion depending on how many patties you are making.
- Bread Crumbs/Almond Meal
Fillings:
- Parmesan Cheese
- Egg
- Sweet Chili Sauce
- Gherkins
- Lettuce
- Bacon
- Avocado
- S + P
Be creative! You can fill your bunless burger with whatever you like. To make this meal more sustainable for the whole family. Add some good carbs like carrot fries or kumara fries.

If you're looking for a new way to spice up zucchini on a ketogenic diet, you've come to the right place! We use zucchini as a flavor vessel, fill it with broccoli and chicken, then tip with cheese and bake. The outcome is just as delicious as you would think.
We’ve all seen keto stuffed peppers and stuffed jalapenos (of course, making one of my favorites – jalapaneo poppers). Now it’s time for a stuffed zucchini! The texture of the zucchini after being roasted will still have a nice bite that stands up to the cheesy gooey filling inside. It’s a perfect lunch for you to have when you want something a little out of the ordinary.
The filling on the inside is just perfect and really comes together with all of the flavors. It’s almost a chicken vegetable medley with cheese and sour cream holding everything together. If your macros can fit, I certainly advise to add bacon as it’s a perfect addition to this. Aside from adding extra sour cream, you could do a light drizzle of ranch on top just to make the flavors pop that much more!

Bolognese sauce is a basic, but mighty, meat based sauce that is typically used for pasta's and lasagna. The secret to a delicious bolognese is a seriously long cook time and just the right temperature.
My recipe is relatively easy with just a few spices, and Rao's tomato sauce. If you cannot find Rao's, then look for a pasta sauce that is free from added sugar. While I'm calling for the marinara, I've also tested this recipe with their cheese flavor and it was equally as delicious!
Instead of asking you to stand watch over a bolognese for several hours, we're going to make things easier by transferring the sauce to a slow cooker. It's best to start in the morning so that your sauce is ready before dinner time, but you can make a batch the day before and store in the fridge until the next day. Once the sauce is ready - the casserole is a breeze! It will only take a few minutes to put together. If you want to tell everyone that you spent the whole day slaving over this bolognese – well, I'll keep your secret!
By the way, bolognese freezes well. Make a double, or triple, batch and you can have bolognese on hand any time you'd like. This is a great recipe for prep day.
I recommend serving this with our breadsticks, or maybe even a reverse seared rib eye steak.
