Hi friends, follow along as I chop up this GIANT-gifted zucchini and make zucchini bread out of part of it in my thrift store bread machine. So easy and delicious. Let me know if you try this recipe or added a twist to yours, I'd love to hear all about it. Thanks for watching and God Bless!
Christine's Routines
Yield 1.5 lb loaf Cuisinart Bread Machine
1/3 C oil
3/4 C finely shredded zucchini
2 large eggs (room temp)
1/3 C packed brown sugar
3 T sugar
1 1/2 C AP Flour
1 T cinnamon
1/4 tsp allspice
1 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1/3 c pecans (or nut of your choice)
Spray inside of baking pan. Follow the order listed placing all ingredients into the pan. Select menu button and hit the cake/quick bread program. While the machine is mixing, scrape down the sides to fully incorporate the ingredients. When the cycle is complete, check with a toothpick, remove from the baking pan, and let cool completely before slicing.

Christine's Routines
Yield: 64 oz (Plus)
5 C oats (I use rolled oats) (not quick oats)
1 C sliced almonds
3/4 C dried cranberries
3/4 C dried coconut
3/4 C pepitas
1/2 C dried blueberries
2/3 C maple syrup
1/3 C coconut oil
1/2 tsp cinnamon
1/8 salt
Combine all ingredients in your slow cooker and stir until well combined. Turn on high for 1.5 hours uncovered, stirring occasionally. Reduce heat to low, uncovered for 2 hours, until crispy and dry. Spread the granola out on parchment/wax paper lined baking sheets to cool completely.
Store in an airtight container, vacuum-sealed bag, dry can or freeze.

Hi friends, we are putting together cucumber relish with my favorite recipe I've tweaked over the years. We've shopped at the Farmers Market and grabbed pickling cucumbers that are in season and are ready to go! Follow along as I complete the recipe by Steam Canning the jars to be shelf stable for the season. Thanks for watching and God Bless!
Christine's Routines
Yield Nine 1/2 pints
3-4 lbs of cucumbers diced
1/4 C canning salt
3/4 C minced onion (or 1 C chopped)
Brine:
1 C apple cider vinegar
1 C white distilled vinegar
1/2 C- 1 C filtered water
1 c sugar (to taste)
2 tsp mustard seed
2 tsp celery seed
1 tsp dill seed
Pinch of Turmeric (optional)
Combine diced cucumbers with canning salt and minced onion in a large bowl. Blend well and cover for 2-3 hours.
Combine all brine ingredients together in a large non-corrosive pot (thicker bottom) and bring to a boil. Add diced cucumber mix and bring to a boil for 10 minutes. Let cool and fill jars as you wish or water bath can or steam can (per video instructions for my elevation) to make the relish shelf stable.

Yield: Nine 1/2 pints
4 C Rhubarb
4 C Blueberries
5 C Sugar
Juice from 1 Lemon
3 T pectin
Combine fruit in a large pot. (I shred my rhubarb in my food processor) Add lemon juice. Simmer until the color starts to change to the blueberry color and the fruit starts to soften. Return to the food processor and blend to the consistency you like. Return to pot and add sugar and pectin. Bring to a low boil, stirring constantly as to not scorch, and lower heat to simmer for 25 minutes or so to make sure everything is melded together. Remove from heat. Jar up contents leaving 1/4 in of head space. Remove bubbles. Wipe rims with vinegar to remove stickiness. Use new lids and rings to seal, finger tight. Water bath can or Steam Can for 10 minutes according to directions. Remove from canner and leave to cool for 24 hours. Enjoy within 2 years.

Yield: 64 oz jar
Salt Brine:
1 C salt (of your choice) I used pickling salt
1 Quart filtered water (let water sit on the counter for 24 hrs if you don't have filtered to de-chlorinate)
Add hard-boiled eggs to the brine mix and set in the fridge for 2 days.
Pickle Brine:
Dry:
Fresh Dill (amount up to you)
3 Bay Leaves
6 Cloves of Minced Garlic
1 T Coriander
2 tsp Whole Mustard Seed
2 T Black Peppercorn
1/2 tsp Crushed Red Pepper
Wet: (amounts are your choice)
Fill jar 1/2 up with filtered water
1 C White Vinegar
1 C Apple Cider Vinegar
Rinse eggs off after 2 days and return to jar. Add dry ingredients on top of the eggs. Then add the wet ingredients. Let sit in the fridge for at least two weeks before tasting. The longer the better!!

Hey friends, You have to give these yummy cookies a try when you get a chance! 20 minutes or so is all it takes to put them together and you have a tasty treat! Yield 6 2-3 inch cookies:
3/4 c rinsed garbanzo beans (or bean of your choice)
1/3 c creamy nut butter of your choice
1/3 c oats (optional)
3 T maple syrup (or sweetener of your choice)
3/4 tsp baking powder
1/4 tsp vanilla
1/3 c chocolate chips
pinch of salt (optional)
Preheat oven to 350. Blend and pulse in a food processor all ingredients except chocolate chips. Fold in chocolate chips. Spoon out on parchment paper lined baking sheet, the size cookie you would like and pat it down and form a circle. Bake for 8-12 minutes depending on the crispiness you like. Let cool at least 10 minutes before serving. Store in the fridge for up to 2 weeks or freeze for 3 months.

Ingredients:
1 Can strained garbanzo beans
1 Garlic clove finely minced
2 T Lemon juice
2 T Olive oil
1/4 t Salt
1 t Cumin
2 T Strained garbanzo bean liquid
Sprinkle of Paprika (Optional)
Directions: Strain garbanzo beans into separate container and SAVE liquid. Add all ingredients to food processor/Ninja/Bullet etc. and blend for 3-4 minutes, checking to see if you need to scrape down the sides. Check consistency. Pulse further if you wish it smoother. Put in container of choice and sprinkle with Paprika (Optional) and refrigerate. Serve with pita chips, veggies, spread on bread, make egg, tuna, chicken salads with it instead of mayo...and the list goes on!
*Note: if too thin you may add greek yogurt but if will make this a dairy item.

1 T Active dry yeast
1 T Salt
3 1/4 C All purpose flour
Let rise for one hour and put in the fridge, covered for up to 2 weeks! That's it!
