Breakfast Country Skillet Goes Handheld. You're Welcome World!

2 Roma tomatoes, fire roasted or 1/2 of a 15oz can Diced Fire Roasted Tomatoes

Chili Cheese Dog Crazy Burrito, with a Twist!
I may need to seek professional help for my crazy burrito obsession lately but this one, this one is special. Putting a chili dog in a burrito is NOT normal. It is EXTRA normal. Then dropping it in the deep fryer and turning it into a Chimichanga, that is truly crazy. I just wish I knew what it tastes like. There is chocolate in the chili so I didn't get to try this one. Amazing Turkey Chili Recipe
Chili comes in many forms and this one is definitely one of them. Turkey Chili is very popular with some folks and if you are one of them, perhaps you are related to my wife. She loves this stuff so I came up with my own amazing recipe. It's relatively quick and easy plus your body will not be mad at you a few hours later. Enjoy!
Chile de Pavo Con Frijoles
Dry Spice Ingredients:
1 tsp Chili Powder
1 tsp Paprika
1 tsp Cumin
1 tsp Chipotle Pepper Powder (Hot Smoked Paprika would work too)
1/2 tsp Mexican Ground Oregano (reg Ground Oregano would work too)
1/2 tsp Cayenne Pepper
1 tsp Salt
2 tsp Granulated Sugar
1 tsp Baking Chocolate or 1/4 of a milk chocolate candy bar
Dried Chile Peppers:
4 Chile de Arbol Peppers
3 Guajillo Peppers
2 Pasilla Peppers
2 New Mexico Peppers (California or other medium heat large pepper)
Wet Ingredients:
12oz of Dark Beer
2 cups Beef Stock
15oz can Tomato Sauce
15oz can Kidney Beans, Drained
1 tbsp Oil
Fresh Ingredients:
1 White Onion, diced
1 Jalapeño, Diced
1 Roma Tomato, Diced
4 Cloves Garlic, minced
1 lb Ground Turkey
Plus, up to 3 tbsp Masa Harina flour, for thickening if necessary
Deseed and remove the stems from your Dried Chiles. Place in a large dry pot (no oil) over medium heat and warm up the dried chiles, just until flexible again. About 1-2 minutes. DO NOT LET THEM BURN. Turn them over a few times while heating
Add Beer and Beef Stock and bring to a simmer. Let the Chiles simmer for about 15 minutes, covered.
Remove the Chile mixture from the heat and let cool for a few minutes before putting it in a blender and blending the Chiles and liquid as fine as you can get it. Strain the mixture into a large bowl and add the Tomato Sauce to the bowl. Set aside for now.
Add oil ti the pot you cooking the Chiles in and add the Onion, Jalapeño, Diced Tomato and garlic to the pot. Brown over medium heat for about 3-5 minutes.
Add the ground Turkey and break up the meat. Cook for about 2 minutes. Add the dry spices and drained kidney beans to the meat and cook until no pink is left in the meat.
Add the Chile and Tomato Sauce mixture to the pot and let simmer, covered for about 1 hour on low heat.
If the chili is too thin add a little Masa Harina at a time and stir to thicken. Continue until you get the consistency you desire. If it gets too thick you can add more Beef Stock or a little water to thin it out.
Serve with more fresh diced onions, shredded cheddar cheese, corn chips, on thin spaghetti or on your favorite hot dogs or burger. Enjoy!

The Perfect Pesto Sauce Recipe
Pesto is one of the best sauces ever invented, next to gravy and chocolate of course. Making it is very simple of this is the last chance for the season. If you have basil in your garden and it is not dead yet harvest it NOW! Here is what you do with it. Enjoy!
Pesto Sauce Recipe
2 cups, firmly packed, fresh basil leaves, washed and dried
1/2 cup parmesan cheese (or a mix of parm and romano)
1/4 cup pine nuts, toasted if you prefer
2 large cloves of garlic
2/3 cup olive oil
1 tbsp lemon juice
Put all ingredients except the oil in a food processor
Run it on high while slowly adding the oil
When all the oil is incorporated stop the food processor and scrap down the sides
Run it again for about 5 seconds and stop.
Store the pest in an air tight container
Drizzle a little extra Olive Oil on top to seal the pesto from air.
Store in the fridge for a few days. Discard once it turns black

A Very Special Green Chile Ortega Burger, Naugles Copycat Recipe
If you have been following this channel for a while now you know I have done a BUNCH of fast-food copycat recipes. Of all of them this is definitely the most recent. Old joke, sorry. Recreating the Legendary Naugles Taco Meat
Back in high school Naugles was the place to go. The closest one to me was not very close but we got over there at least once a week. It helped that one of my friends worked the graveyard shift there for a bit. Not very long... we all didn't help that situation much BUT it there is a special place in my heart for Naugles. It is back and as good as ever from what I hear. I haven't been able to get out there to try it so I have been working on a few of my old favorites here at home. The Naugles Taco Meat was really great. It was way better than everyone else back then and I hear it still is. They are very proud of the pure ingredients they use to make it and I worked to bring that to this recipe. This is the new "go to" taco meat recipe from me and I hope, for you too. Enjoy!
1 lb Ground Beef
1 tbsp Chili Powder
1 tsp Paprika
1 tsp Cumin
