Chicken Street Tacos
Recipe:
- 2 Medium Sized Chicken Breasts (Cut into 1/2 in pieces)
- 2 Tbsp Chicken Taco Seasoning
- Shredded Cabbage
- Taco Cheese
- Cilantro Lime Crema
As far the wraps go, I used the burrito sized flour tortilla. But you could go with romaine lettuce or not even use a wrap.
Cut chicken into 1/2" pieces
Mix together chicken and seasoning (with 4-5 Tbsp of water) in a pan over medium heat
Let the seasoned chicken cook for 5-7 minutes
Build with Chicken, Cabbage, Cheese and top with the Cilantro Lime Crema (even a squeeze of fresh lime).
This recipe is enough to feed 2-3 people

This cilantro lime crema is a very delicious sauce that can be used not only on tacos. But, can be used as a dipping sauce for vegetables. It only takes a few minutes to put mix together.
Recipe:
- 1 Lime (Juice & Zest)
- 2 Chopped Garlic Cloves
- 1/2 Cup Mayonnaise
- 1/2 Plain Greek Yogurt
- 2 Tbsp Cilantro
Directions:
Juice and zest 1 lime
In a food processor combine juice & zest of lime, garlic, mayo, Greek yogurt and cilantro.
Pulse in the processor for 5-10 seconds or until everything is combined
Pour in a container than can be sealed and refrigerate
Use within 3-5 days

- 4-6 Kale Leaves
- 3 Tbsp Agive

1. Pre-heat your oven to 200F / 93C
2. Rinse kale and remove as much water as possible
3. Place kale into a medium size bowl
4. Mix Agave (or use Honey), Olive Oil, and Garlic Power
5. Place kale onto parchment paper lined baking sheet
6. Bake in oven for 50 minutes
7. Kale should be dried out when done. Let set for 5 minutes before removing kale from baking sheet.

Simple homemade bread recipe | Inexpensive and Easy
Nothing is better and rewarding than making your own delicious homemade bread from scratch. Taking about 15 minutes of prep time, you can bake a great loaf of bread. You can use this with just about any meal (breakfast, lunch or dinner).
Recipe:
- 1 Packet of Instant Rise Yeast
- 3 Cups of Bread Flour
- 1 tsp of Iodized Salt
- 13 oz of room temperature water
Combine the yeast and salt into the bread flour and stir
Add water and combine into a dough ball
Cover with a clean kitchen towel and place in an warm area (For at least 7 hours)
Place the dough onto a well floured surface, and then fold and rotate dough (3 times)
Take dough and fold in at the bottom, should be a slight dome on top
Place dough into a pan or back into the bowl (make sure to oil the inside)
Cover with towel and return to warm place for an hour
Baking dish should have a cover and be somewhat deep to handle the rising dough as it cooks
Put the baking dish into the oven and Preheat oven to 450F
Once the oven is preheated, take the baking dish out of the oven and move to dough into the dish
Cover and return to the oven for 25-30 minutes
After baking remove from oven and let cool for 10-15 minutes on a cooling rack
Once the bread has cooled some, slice and enjoy!
This bread will stay good for up to 5 days, keep in covered with plastic wrap or in a Ziploc bag.

Roasted red peppers are an ingredient that can be used in numerous recipes. Sometimes they are hard to find at the grocery store. Now, you can make your own in a short amount of time.
Ingredients:
- Red Peppers (you could use any type of colored pepper for this)
Instructions:
- Pre Heat air fryer per instructions for your particular air fryer
- Cut your peppers in half, clean out any seeds inside
- Place peppers halves face down, for 15 minutes at 370F
- Once the time is up, move them into a sealed container for 30 minutes
- After 30 minutes, removed the lid and peel the skin off of the peppers
- Use as directed per the recipe that uses roasted red peppers

Homemade Roasted Red Pepper Hummus
Roasted Red Pepper Hummus Recipe:

Ingredients:
2 Cups of Sliced Roasted Red Peppers
1/4 Cup Tahini
1/4 Cup Lemon Juice (Juice of 1 Lemon)
1/3 Cup Olive Oil
1 Tbsp Ground Cumin
2 Cloves of Garlic Chopping
2 tsp Salt
1 1/2 Cans (22oz) of Chickpeas (Rinsed)

Directions:
- Slice 2 cups roasted red peppers (set off to the side)
- Mix together Tahini and Lemon Juice in Food Processor for 1 minute
- Scrape the sides and mix for an additional 1 minute
- Tahini and Lemon Juice mixture should have a creamy texture
- Add Olive Oil, Cumin, Garlic, and Salt to the food processor
- Blend on High for 1 minute, scrape the sides and mix for an additional 30 seconds
- Add half the chickpeas, blend on high for 1 minute
- Add the rest of the chickpeas, blend on high for additional 1 minute
- Add roasted red peppers and blend on high for 1 minute
- Scrape the sides and blend for an additional 60 seconds
- If you want to thin the hummus, add a Tbsp of Olive Oil and blend to 30 seconds
Serve with pita chips, fresh vegetables, or your favorite chips and enjoy!

Directions:
- Turn on stove burner to Medium-High heat

- Stir Quinoa for 3-5 minutes, you may here a few pops from quinoa as it toasts

- Mix water and quinoa together, wait for to come to boil.
- Cover and reduce heat to simmer and cook for 20-25 minutes
- Stir quinoa, if there is still any liquid cook for an additional 5 minutes
- Remove from heat, and move to a storage container
Quinoa is good for roughly 5 days, you could freeze a portion to extend the length.

Ingredients:
1.5 lbs of Ground Beef
1/2 chopped onion
1 tsp of chopped garlic
2 tsp Chili Powder
2 tsp Ground Cumin
4 Tbsp Coconut Sugar (alternative Brown Sugar)
1.5 tsp Kosher Salt
1 - 15oz can White Kidney Beans
1 - 15oz can Dark Red Kidney Beans
1 - 15oz can Black Beans
1 - 28oz can Crushed Tomatoes

Directions:
- On your Instant-pot, select the Sautee function and set timer for 5 minutes
- Brown the 1.5 lbs of ground beef, break up to help cook faster
- Add 1/2 onion chopped, also add 1 tsp of garlic
- Let onion and garlic cook for 3-4 minutes
- Add Chili Powder, Ground Cumin, Coconut Sugar, and Salt
- Rinse the beans before adding to the pot
- Combine in the beans into the instant-pot and stir together
- Add Crushed Tomatoes
- Put lid on your instant-pot, making sure the lid is set for sealing
- Select Pressure Cook and set timer to 18 minutes
- Once time is complete give 20 minutes to naturally decompress
- Remove lid carefully and serve

Beef Jerky is a snack that is perfect for road trips, or when you are on the go. This recipe uses very basic ingredients and is easy to make.
Beef Jerky Recipe:
Ingredients:
2-3 lb Roast Beef (Sliced ⅛” thick)
3 Tbsp Soy Sauce
3 Tbsp Coconut Sugar (can use brown sugar)
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp Sesame Oil
Additional Item:
Skewer sticks (metal kabob skewers are another option)

Directions:
- Combine Soy Sauce, Coconut Sugar, Onion Powder, Garlic Powder, and Sesame Oil into a medium-sized bowl.
- Add roast beef into the bowl and stir together or use your hands.
- Place the roast beef into a ziplock bag (gallon size preferred)
- Marinate overnight in your refrigerator
- Adjust the racks in your oven to top and bottom positions to catch the drips
- Using skewer sticks, put 3-4 pieces of meat on each stick.
- Then place into the oven, place each piece of meat through a slot of the oven rack
- Heat oven to 200F / 93C, allow the meat to cook for 3 hours or until sufficiently dried out
- Remove from oven, and break meat from the skewer sticks
- Place into a storage container and keep in a cool place for 1 month.

Homemade Almond Milk | A Recipe that simply rocks!
Almond Milk Recipe:
Ingredients:
1 Cup of Raw Almonds
4 Cups of Water

Directions:
- Put 1 cup of almonds into a bowl
- Add enough water to cover the almonds in the bowl
- Place the soaking almonds off to the side, give them 12-24 hours to absorb the water
- Drain the waterlogged almonds, and place them into a blender (Vita mix or Ninja)
- Add 4 cups of water into the blender
- Cover the blender, and blend on medium speed for 60-90 seconds (very small almond pieces)
- Using cheesecloth or nut milk bags (which can be purchased on Amazon), pour in the blended almond milk
- Give the milk a chance to strain through, but you will need to squeeze through any remaining almond milk
- Once all the almond milk has been strained, pour the milk into a storage container.
- Keep the milk refrigerated, it should be used within 3-5 days.
