WRITTEN RECIPE:
➜ Jerky Ingredients:
1 1/2 lb ground pork (80-85% lean)
2 tbsp sugar
1/4 tsp white pepper powder
1/4 tsp five spice powder
1 tbsp Worcestershire sauce
3 tbsp oyster sauce
2 tbsp light soy sauce
1 tbsp Shaoxing wine
1 tsp sesame oil
Baste Ingredients:
1 tbsp honey
1 tsp water
➜ Instructions:
1) Place all jerky ingredients into a large bowl and mix until well combined with the pork.
2) Cover and refrigerate the marinated pork overnight, occasionally removing from the fridge to mix ingredients again.
3) The next day, cover a baking sheet with parchment paper, then transfer the pork on top.
4) Cover the pork with 1-2 layers of saran wrap, then roll the ground pork until flattened into a 1/8" thick sheet. Cut as necessary to fit the pork pieces into your dehydrator.
5) Mix the honey with the water, then baste one side of the sheets of pork with the honey mixture.
6) Place into dehydrator and dehydrate at 158°F for 7 hours, flipping and basting the other side halfway. Note that times and temperature may vary depending on the make and model of your dehydrator, as well as the thickness of your pork. Adjust as needed.
7) Enjoy!

WRITTEN RECIPE:
➜ Ingredients:
1.5lb beef brisket, cut into chunks
1.5lb beef shank, cut into chunks
5-6 thick slices of ginger
1.5lb daikon radish, peelef and cut into large pieces
1 tbsp cooking oil
Corn starch slurry (2 tbsp corn starch mixed with 2 tbsp water)
➜ Marinade:
4 tbsp chu hou paste
2 tbsp Shaoxing wine
1 tbsp light soy sauce
1 tbsp dark soy sauce
1 cup beef or chicken broth
3 star anise
1 tbsp sugar
1 tbsp oyster sauce
➜ Instructions:
1) Place brisket and shank chunks into a large pot and fill with enough cool water to cover the beef. Bring water to a full boil over high heat. Discard scummy water then rinse the beef until clean and set them aside.
2) Press sauté on your Instant Pot and wait until the hot indicator is on.
3) Transfer oil into the pot, swirling to coat evenly, then add the ginger and stir until aromatic.
4) Add the chu hou paste, beef and remaining marinade ingredients, then stir to deglaze the pot.
5) Cancel the sauté function. Close the lid, ensuring the steam valve is in sealing position, then pressure cook on high for 40 minutes.
6) Allow pressure to naturally release or do a quick release.
7) Turn on sauté mode again, then gradually pour in corn starch slurry while stirring continuously until the stew is thickened.
8) Serve with rice or noodles and garnish with optional scallions. Enjoy!

WRITTEN RECIPE:
➜ Dipping Sauce:
3/4 tsp hondashi powder
1 tsp sugar
3/4 cup water
3 tbsp light soy sauce
2 tbsp mirin
1) Combine hondashi, sugar and water in a small pot. Bring to a slight boil while mixing until the powder and sugar are dissolved.
2) Add soy sauce and mirin and stir until combined.
3) Set aside to cool.
➜ Tempura:
25 slices vegetable of choice, 1/4” thick
4 shrimp, peeled, deveined and straightened, leaving just the tail
Salt, optional
For the batter:
1 cup all purpose flour
1 beaten egg, cold
1 cup cold water (with ice)
For deep frying:
Oil
Small bowl of all-purpose flour
1) Pat the sliced vegetables and shrimp dry with paper towels
2) Combine the flour, beaten egg and water (without ice cubes) and mix until well incorporated. Do not overmix until consistency is smooth, leave any remaining clumps.
3) Heat oil in deep frying vessel until temperature is 350 deg F.
4) Individually, dredge the vegetable and shrimp in the flour, shaking off any excess, then lightly coat in batter, removing any excess. Immediately deep fry in heated oil until slightly golden brown on both sides or when fully cooked. See notes below.
5) Remove cooked tempura and transfer to a paper towel or parchment lined plate. Serve with cooled dipping sauce or topped with salt, optional. Enjoy!
Notes:
1) Cooking times may vary depending on the ingredient, its thickness and density.
2) Do not overcrowd your cooking vessel as batters may stick.
3) Remove any byproducts while deep frying to prevent them from burning.

WRITTEN RECIPE:
➜ Ingredients:
8 cups water (or 7 cups water + 1 cup mushroom soaking liquid)
2.5lbs pork ribs
2 packets Bak Kut Teh herbs & spices
3-5 pieces Wisconsin American Ginseng Roots
2 whole heads of garlic, outer layers removed
3 star anise (if not included in Bak Kut Teh packets)
1 cinnamon stick (if not included in Bak Kut Teh packets)
1 tbsp dark soy sauce
1 tbsp light soy sauce
2 tbsp oyster sauce
10 dried shiitake mushrooms, rehydrated
1 tsp salt, or to taste
1 tsp sugar, or to taste
Instructions:
1) Place pork ribs into a large pot and add just enough water into the pot to cover the ribs. Bring the water to a boil over high heat, then discard the scummy water. Rinse the ribs with cool water until clean, then set aside.
2) Remove stems from the rehydrated shiitake mushrooms. Halve the mushrooms, then set aside.
3) Add all ingredients into the Instant Pot and pressure cook at high for 40 minutes. Allow the pressure to naturally release completely when time is complete. (Add the star anise and cinnamon stick only if they are not included in your Bak Kut Teh packets.)
4) Give the soup a taste and adjust ingredients according to your preferences.
5) Enjoy with white rice, with added tofu puffs and/or enoki mushrooms!

Ingredients :
1 large egg, beaten
4 tbsp nonfat vanilla Greek yogurt
3 slices bread of choice
Berries
Instructions:
1) Combine egg with yogurt until well blended
2) Using a spoon, gently press down on one side of each bread to create a well.
3) Transfer a few spoonfuls of the yogurt mixture into the well.
4) Top with berries
5) Air fry at 350 deg Fahrenheit for 4-5 minutes or until the bread is toasted.
6) Cut toasts in half (optional) and enjoy!

WRITTEN RECIPE:
➜ Ingredients:
40g dried prunella vulgaris
15 cups water
Sugar, to taste (rock sugar, brown candy or granulated sugar)
➜ Instructions:
1) Soak prunella vulgaris in water for a few minutes, then rinse off impurities. A handful at a time, squeeze any excess water from the prunella vulgaris, strain and set aside.
2) Transfer 15 cups of water into a large pot, then add the washed prunella vulgaris.
3) Using a spoon or ladle, gently press the prunella into the water. Cover the pot with a lid then bring to a boil over medium high heat.
4) Once it comes to a full boil, remove the lid, set the heat to low and allow tea to simmer for 30 min.
5) Optionally, add sugar to taste and stir until dissolved.
6) Serve the tea hot or allow to cool, refrigerate and enjoy it chilled!

WRITTEN RECIPES:
➜ TUNA SANDWICH:
2 5oz cans chunk light tuna
1 stalk of celery, diced
1 tsp lemon juice
1/2 cup mayo
1/4 tsp salt
1/8 tsp black pepper, or to taste
4 slices of bread, toasted
1) Drain liquid out of both cans of tuna
2) Transfer tuna, diced celery, lemon juice, mayo, salt and pepper into a bowl and mix until well combined
3) Sandwich half of tuna mixture between 2 slices of bread. Repeat with remaining tuna mixture and bread. Enjoy!
➜ SALMON BURGER:
1 14.75oz can of pink salmon
1/2 medium onion, diced
1/2 cup Italian bread crumbs
1 large egg
4-5 tbsp liquid from canned salmon
1-2 tbsp cooking oil
Hamburger buns
1) Drain liquid from canned salmon and transfer salmon into a separate bowl. DO NOT discard liquid.
2) With a fork, break up the canned salmon then combine with onion, bread crumbs, egg and liquid from the can. Combine until well blended. (If the mixture is too dry, add more liquid from the can, 1 tbsp at a time)
3) Shape the salmon mixture into 5-6 salmon patties.
4) Heat oil on a nonstick pan and sear salmon patties until both sides are golden brown.
5) Sandwich each salmon patty between 2 hamburger buns and add fillings of choice. Enjoy!

WRITTEN RECIPE:
➜ INGREDIENTS:
FOR THE STEAK:
1 lb flank steak thinly sliced (about 1/4 inch thick)
2 tsp light soy sauce
2 tsp cooking oil
2 tsp corn starch
FOR THE SAUCE:
1 tbsp sugar
1/4 cup water
1/4 cup light soy sauce
1 tbsp corn starch
REST OF THE DISH
2 tbsp cooking oil
2 bell peppers, cut into strips
1 medium sized onion, sliced
1/4 inch thick ginger, julienned
1 tbsp Shaoxing wine
Dash of black pepper, optional
➜ INSTRUCTIONS:
1) Marinate the flank steak with the light soy sauce, cooking oil and corn starch for at least 15 minutes.
2) In a bowl, add all the sauce ingredients, mix thoroughly then set aside.
3) Heat 1 tablespoon of cooking oil on a wok or large pan over medium-high heat. Add the bell peppers and onions and stir-fry until tender, approximately 5 minutes. Transfer to a plate.
4) Heat the remaining tablespoon of cooking oil on the same wok or pan and add the sliced ginger. Allow ginger to cook for about 30 seconds.
5) Add the marinated steak. Cook until steak is slightly pink, about 3 minutes.
6) Add the bell peppers and onions back into the pan with the steak, then toss with Shaoxing wine and optional black pepper.
7) Give the sauce mixture a quick whisk to loosen up the corn starch, then pour it into the pan.
8) Immediately turn fire down to a simmer. Combine the sauce with the beef, onions and peppers, until the sauce thickens, about 1-2 minutes.
9) Top with more black pepper (optional), mix then serve.

3 lb whole chicken, deskinned
1 tbsp cooking oil
1 large thumb ginger, sliced
8-10 dried shiitake mushrooms, rehydrated
4 cups water
1 cup mushroom soaking liquid
6-8 dried razor clams
1 tsp salt, or to taste
3-4 tbsp Fukien cooking wine
To serve:
Fuzhou longevity noodles
Hard boiled eggs
➜ INSTRUCTIONS:
1) Place deskinned whole chicken into a large pot filled with enough cold water to cover the chicken. Parboil over high heat until water comes to a full boil. Discard foamy water, then rinse chicken thoroughly with cool water. Strain and set aside.
2) Remove stems from rehydrated shiitake mushrooms and slice each mushroom into halves or threes. Do not discard the mushroom soaking liquid.
3) Press "sauté" on your multicooker. When it is heated, transfer 1 tbsp of cooking oil into the pot, swirling to coat evenly. Add the sliced ginger and stir for about 30 seconds.
4) Transfer the sliced mushrooms, parboiled whole chicken, Fukien cooking wine, water, mushroom soaking liquid, dried razor clams and salt into the pot.
5) Cancel the sauté function and pressure cook for 30 minutes, ensuring that the steam valve is in sealing position.
6) When the soup is done, allow the pressure to naturally release completely.
7) Serve with Fuzhou Longevity Noodles and hard boiled eggs. Enjoy!

15 oz rice noodles
➜ SAUCE 1
2 tbsp hoisin sauce
1 tbsp light soy sauce
1 tsp sugar
2 tbsp water
➜ SAUCE 2
1/2 tbsp peanut butter (or to taste)
1 tbsp boiling water
➜ OPTIONAL
sesame seeds
chili sauce
➜INSTRUCTIONS:
1) If noodles were refrigerated, soak package in warm water for 30 minutes to an hour prior to cooking.
2) Steam rice noodles according to package instructions (I typically steam for 10 minutes or until softened).
3) In a small bowl, add the hoisin sauce, soy sauce, sugar and water and mix until well blended.
4) In a separate small bowl, mix the peanut butter with the boiling water. (You may add more or less peanut butter or water, to taste, and mix until desired consistency is reached.)
5) When noodles are cooked, remove and top with both sauces and optional sesame seeds and/or chili sauce.
6) Serve immediately. Enjoy!

For the dressing (see note):
3 tbsp rice vinegar
3 tbsp light soy sauce
3/4 tbsp fish sauce
2 tbsp sesame oil
1 tbsp lime juice
1.5 tbsp sugar
For the coleslaw:
3 cups green cabbage, shredded
3 cups red cabbage, shredded
2 cups carrots, julienned
2 cups bean sprouts, trimmed
1/4 cup mint, chiffonade
Toppings:
1/3 cup roasted peanuts
1/4 cup fried shallots
➜ INSTRUCTIONS:
1) Transfer dressing ingredients into a jar and shake until well blended.
2) Place the coleslaw ingredients into a large salad bowl.
3) Pour dressing onto salad and mix until well incorporated. Top with peanuts and fried shallots.
4) Allow to marinate for at least 15 minutes then serve immediately. Enjoy!
Note: Dressing ingredients were doubled in the video since I like to make enough for 2 large bowls of coleslaw in advance.

4 large eggs
3 tbsp Kewpie mayo
1 tbsp heavy cream (or milk)
1/8 tsp fresh ground pepper
1/4 tsp salt
1/4 tsp sugar
4 slices Japanese bread or milk bread
Butter, optional
➜ INSTRUCTIONS:
1) Bring a pot of water to a boil, then boil the eggs for 10 minutes. Immediately soak the eggs in cold water for 5 minutes, then remove the shells.
2) Place the eggs in a medium sized bowl. Using a fork, mash them into small pieces.
3) Add Kewpie mayo, heavy cream, fresh ground pepper, salt and sugar and mix until all ingredients are well incorporated.
4) Transfer half of the mixture onto a slice of bread (butter for extra creaminess - optional), then top with another slice of bread. Flatten the sandwich gently with your palms, then remove the crusts and cut in half.
5) Repeat with the remaining egg mixture and bread slices. Enjoy!

WRITTEN RECIPE:
➜ INGREDIENTS:
For the teriyaki sauce:
1/2 cup light soy sauce
3 to 3.5 tbsp light brown sugar
1/2 cup mirin
1/2 water
1/4 tsp garlic powder
1/4 tsp ginger powder
Corn starch slurry (1 tbsp corn starch mixed with 2 tbsp water)
For the teriyaki salmon:
3 salmon fillets, 5 - 5.5oz each
4-5 tbsp teriyaki sauce (see above), or to taste
Cooking oil spray
Sesame seeds, optional
➜ INSTRUCTIONS:
1) To make the teriyaki sauce: In a small pot, over low heat, transfer all the sauce ingredients (except for the corn starch slurry) and stir until the mixture comes to a slight boil. Gradually add the corn starch slurry while stirring continuously until the mixture thickens. Allow the sauce to cool before use, or refrigerate for future use.
2) Coat the salmon fillets with 4-5 tbsp of the teriyaki sauce and marinate for at least 15 minutes.
3) Spray a thin layer of cooking oil on the tray of your air fryer basket.
4) Rest the marinated salmon fillets onto the tray, 1-2 inches apart, skin side down.
5) Spray cooking oil on the salmon fillets, then air fry at 390°F for 10 minutes. Keep in mind that times and temperatures may vary depending on your air fryer.
6) Remove fillets from air fryer. Optionally, baste the salmon with more teriyaki sauce and top with sesame seeds. Serve immediately and enjoy!
