Famous Cream Corn Recipe
On this episode of the "CookingWithDiana" Cooking Show, Diana will be showing you how to make a Old Fashion Cream Corn. Ingredients
4 Cups of Frozen Corn( yellow or white corn is up to you)
2 to 3 Tablespoons of butter
2 to 3 Tablespoons of flour
3 to 4 Tablespoons of sugar
Half and half use enough to cover the corn in the Pan or Pot about 3 to 4 cups
¼ cup of parmesan cheese

Chicken Croquettes
On this episode of the "CookingWithDiana" Cooking show we will be showing how to make Croquettes. I learned this recipe from my Mother-in-law who was from Galicia Spain, this recipe had been passed down mother to daughter for many generations and is the perfect recipe for this time of year since we normally have Turkey, Chicken or ham left over from thanksgiving or any of the holiday Dinners. Ingredients
Croquettes
5 to 6 Tablespoons butter
½ cup of Parsley chopped (We use Italian parsley)
1 Medium Onion chopped small
1 ½ cups of all purpose flour
4 ½ cups of milk
3 cups of pre cooked Chicken,Turkey or ham (Break up or cut meat into very small pieces)
To bread the Croquettes
½ cup of flour
2 to 3 eggs beaten
1 to 2 cups of bread crumbs (We prefer Italian style bread crumbs)

4 28 ounce cans of Crushed Tomatoes
1 large Onion hopped
6 to 8 cloves of Garlic chopped
2 Table spoons of Italian Seasonings
2 Table spoons of Sugar
1 Teaspoon Black Pepper
6 table spoons of olive oil

2.5 lbs of Ground beef
1 Onion chopped finely
8 Garlic cloves minced
2 Eggs
1/2 cups of cream or milk
1 Tablespoon of Italian Seasonings
1/2 Parmigiano-Reggiano
1 Cup of Italian Style Bread Crumbs

Paella simple chicken and rice version.

Ingredients
4 to 5 Tablespoons of Olive oil
2 Cups Rice (short grain rice "Cal Rose rice" works beautifully)
1 Onion chopped
4 Cups of Chicken Broth
6 Plum Tomatoes chopped (if using the larger beef steack tomatoes use 4)
4 Chicken Breast chopped into smaller pieces
1 cup of Spanish Chorizo or Portuguese linguica
1 Red Pepper sliced
3 to 4 Garlic cloves sliced
1 can of peas (we prefer Sweet Peas)
1 Cup of White Wine If you do not use wine replace with one cups Chicken Broth
1 Teaspoon Salt
1/2 Teaspoon Black Pepper
2 Tablespoons of Pimenton Dulce
1 to ½ teaspoons of Saffron(if you are using fillaments if you use the Ground Saffron about ¾ of a Teaspoon.
Optional Items
Pimenton Picante if you want to Spice up the paella though traditionally Pimenton Dulce is used
