The Mediterranean Diet Series For Beginners: 365 Quick And Simple Recipes To Stay Energetic And Fit Without Giving Up Delicious Dishes.

Ingredients:
Two garlic cloves, minced
Two yellow onions, chopped
Four scallions, chopped
Two carrots, grated
Two teaspoons cumin, ground
½ teaspoon turmeric powder
Salt and black pepper to the taste
¼ teaspoon coriander, ground
Two tablespoons parsley, chopped
¼ teaspoon lemon juice
½ cup almond flour
Two beets, peeled and grated
Two eggs whisked
¼ cup tapioca flour
Three tablespoons olive oil

Directions:
1. In a bowl, combine the garlic with the onions, scallions, and the
rest of the ingredients except the oil. Stir well and shape
medium fritters out of this mix.
2. Preheat pan over medium-high heat, place the fritters, cook for
5 minutes on each side, arrange on a platter, and serve.
