Jalapeno Hot Sauce - a wonderful taste from the pepper source so well known by all pepper lovers. This video begins with a special vacuum ferment that spanned 102 days. In addition to the long fermentation time, this ferment was maintained under vacuum FOR THE ENTIRE time of the ferment! Each day during the ferment, a new vacuum was pulled in the container. I anticipated that this would impart an extra "funk" to the pepper source not typically found in a ferment. Hot sauce blending is always fun, but the unpredictable taste from this experimental batch was a surprise.
