How to make a Low Carb Bibimbap Bowl

You won't miss the rice with this version of a Low Carb Bibimbap bowl! This recipe comes straight from my health program: OPTAVIA! It's so delicious, and so good for you. Let me show you how to make this. Please don't pass this one by - try it out and let me know what you think!

4 Servings
Per Serving: 280 kcal / 34g protein / 9g carbohydrate / 12g fat

INGREDIENTS:
• 1 tsp olive oil
• 5 cups baby spinach
• 1 tsp toasted sesame oil
• 1/4 tsp salt
• 1 lb 95-97% ground beef or stir-fry steak
• 2 T chili garlic sauce
• 1 T reduced sodium soy sauce
• 2 cups riced cauliflower
• 1 cup thinly sliced cucumber
• 4 fried or hard-boiled eggs
• 1/2 cup chopped green onions
• 1 T sesame seeds

DIRECTIONS:
1️⃣ Heat the oil in a skillet over medium-high heat. Add the spinach and cook for a few minutes or until just wilted. Drizzle the sesame oil over the top and lightly season with salt. Remove spinach from skillet and set aside.
2️⃣ Add the ground beef to the skillet used to the spinach. Cook the beef until fully browned. Stir in the chili garlic sauce and soy sauce; cook for one minute then remove skillet from heat.
3️⃣ Steam the riced cauliflower in the microwave with one tablespoon water until tender (3-4 minutes).
4️⃣ Build the bowls by first adding 1/2 cup riced cauliflower to each one. Arrange a quarter of each on top: spinach, ground beef, and cucumber. Add an egg to each bowl and garnish with green onions and sesame seeds.
