Ready for a game changer combo??

These BURRATA ROASTED RED PEPPERS are a bliss to eat.
.
Seriously, one of my favorites… the flavors and textures all go so well together, and best of all, it’s ridiculously easy.
.
Here is all you need to do:
.
1.Grab some mini peppers, wash them well. These peppers are great, but jimmy nardello red peppers are my favorite -not too sweet, and not really hot. You have the option of keeping these whole, or slice them in half and de seed them. The seeds don’t bother me and there were not too many with my peppers.
.
2.Lather up the peppers with about 1/4 cup olive oil,sea salt, fresh ground pepper, some truffle seasoning, and a tsp of garlic powder.
.
3.Grab a baking sheet, pile on the peppers, then put in the oven at 450F for about 17-20 minutes until roasted on the first side. Then remove from the oven, flip over, add more salt / oil to your liking (if desired), then put back in for another 15-17 minutes until perfectly roasted.

4.Remove from the oven, then plate the peppers.
.
5.Strategically add burrata cheese (I used a truffled one which is amazing), some roasted walnuts, and some fresh lemon basil.
.
6.Drizzle with some ridiculously high quality balsamic vinegar (makes all the difference here!)
.
Serve it up as a side, appetizer, or if you are like me, just make extra and devour as your main course. So, so good.
