First Time Cooking Eggplant

I didn't realize eggplant could actually taste good. It took me almost a week to actually do all the steps. I kept forgetting it was in the garage fridge. Even aftwr sitting for several days, the prepped slices were still firm. They turned out so delicious. After baking the breaded slices, I layered them with cheese and vodka sauce and baked until melted and bubbly.
