Creamy Pumpkin Pasta - Vegan Meal - Easy Vegan Dinner Recipes

👉👉👉serves three - four

👉👉👉you will need:

- 1 cup of raw cashews
- 1/4 of a kent pumpkin
- 1/2 tbsp olive oil
- 1/4 cup sundried tomatoes
- 2 tsp garlic powder
- 1 tsp veggie stock powder
- 3 tbsp nutritional yeast
- the juice of 1 lemon
- 1 cup water
- 4oog pasta
- 1/4 tsp salt

👉👉👉to create:

1. soak the cashews in boiling water for 1 hour.
2. cut the pumpkin into small pieces, ensuring to cut the skin off. place on a baking tray, drizzle with olive oil and bake for 30-40 minutes or until soft.
3. remove the pumpkin from the oven and place in the fridge to cool. drain the cashews.
4. in a high-powered blender, combine cashews, pumpkin, sundried tomatoes, garlic powder, veggie stock powder, nutritional yeast, lemon, salt and water until smooth.
5. cook the pasta as per packet instructions, before draining and placing into a large pan with the pumpkin sauce. stir consistently, until sauce is hot and then remove from the heat.
6. serve hot & enjoy!
