Surprisingly Delicious Chicken Soup Recipe #foodshorts

Super easy & surprisingly delicious chicken soup! My son had seconds and thirds! It was hard to eat just one serving.

Ingredients:
🔹13.5g olive oil
🔹450g large onions, chopped
🔹274g (about 3 large carrots) chopped
🔹4g (about 2 tbsp) fresh thyme
🔹4.5 cups chicken stock
🔹450g chicken breast (about 4 large)
🔹300g sliced mushrooms (about 3.5 cups)
🔹Salt to taste
🔹Fresh cracked black pepper to taste
🔹180g Greek yogurt (nonfat plain) about 3/4 cup
🔹2 cloves garlic, minced
🔹Half a lemon, juiced

DIRECTIONS:
1. Cook the chicken. Lightly spray a pan with nonstick spray and cook on both sides until fully cooked through. Let cool for 5 minutes then chop into bite-sized pieces.

2. Heat oil in a large pot over medium heat. Add carrots, onions, and thyme and sauté for 15 minutes. Stir in stock, bring to a boil, cover then simmer for 10 minutes.

3. Remove half the mixture and purée with a blender (immersion or regular). Pour back into pot. Add mushrooms, chicken, and salt & pepper. Simmer for 5 minutes until heated through.

4. Add garlic, yogurt, and lemon juice. And enjoy!
