Roasted Carrots with Cream Cheese | How to Make the Simplest and Most Delicious Roasted Carrots

INGREDIENTS
CHEESE CREAM
3½ ounces salad cheese (block)
⅝ cup Greek-style yogurt 2%
½ tsp finely grated lime zest (pesticide-free)
freshly ground pepper

HONEY GLAZE
2 tbsp honey
1 tbsp sesame oil
2 tbsp freshly squeezed lime juice
1½ tbsp grated fresh ginger
1 tbsp finely chopped red chilli
½ tsp salt flakes
⅕ cup chopped fresh mint leaves
12 rinsed carrots keeping approx. 1¼ in. on the tops
½ tsp coarse salt

PREPARATION
1. Mash the cheese in a bowl and combine with the yogurt, lime zest and pepper. Cover and refrigerate until serving.
2. Combine the honey, oil and the rest of the ingredients. Season to taste.
3. Boil the carrots in lightly salted water for approx. 3 min. Drain well in a colander.
4. Heat a grill pan nice and hot – about 3 min.
5. Grill the carrots for about 10 min. – turning occasionally – until golden.
6. Brush with some of the glaze during the last 2 min.
7. Drizzle more glaze over the carrots in the serving dish.
8. Sprinkle with salt flakes and mint.
