First cook on the new offset smoker, baby back ribs!

Picked up a new (to me) offset smoker. It's a pit from Matt's BBQ in Central Texas.

Interesting combination of reverse flow and conventional, using tuning plates to can convert it from one to the other.

In this video I mostly go over the new smoker, me getting familiar with the smoker, and during the process I smoked a couple of baby back ribs and some sirloin baseball stakes.

Using post oak wood here, we've got an abundance of that here. I wasn't prepared for a new offset smoker so I didn't have my stuff together. But somehow we got through it.

It took me about an hour to get fire management under control. After that there were zero fire and smoke issues.

My ribs came out a bit over done... or so I thought. After the cook they were falling off the bone, but once I let it rest for half an hour they came back and were pretty normal. Weird experience there for me.

All in all it was a fun experience, this poor pit is going to get worn out y'all! I'm going to be cooking on it a lot.

I'll admit these weren't the best ribs I've ever cooked, but give it time. It's going to get so much better!
