Anthocyanin pigment a flavonoid present in the rice is responsible for this dark purplish color. It is believed this rice has anti cancer and anti inflammatory properties as well linked to reducing obesity diabetes and heart disease. The black rice comes in two forms, long grain jasmine or sticky glutinous rice, which is actually gluten free. This high fibre rice takes more time to cook then any other type and has a slightly nutty flavour to it. Being a solid source of protein and iron this rice is a welcome addition to any diet. This fancy looking green rice is one with a bit of a secret. It’s actually medium-grain white rice that is dyed green with bamboo juice. The reason this is done is to add a green tea flavour and aroma to the rice. The green color comes from the Chlorophyll in the bamboo which adds a nice array of nutrients to this rice which you’d normally not have like B vitamins, vitamin C, vitamin E, potassium, manganese, calcium, and phosphorus. Bamboo juice is also hydrating, adds a nice flavour, and antibacterial. If you have the choice the jade pearl rice is a great alternative to normal white rice.
