Filipino PAN DE COCO (Coconut Bread)

One of the favorite snacks of the Philippines, pan de coco is a sweet roll with stuffed coconut filling. Its popularity is only surpass by its richness, with the lightly sweetened coconut meat providing a wealth of nutrients in a delightful package. Best to pair with coffee or tea!

INGREDIENTS:
FOR THE YEAST:
-1/2 cup warm water
-2 1/4 tsp. of Active Dried Yeast
-1 tsp. of sugar
FOR THE DOUGH:
-3 cups of all purpose flour (add more flour if dough is too sticky when mixing)
-3/4 cup of sugar
-1 tsp. of salt
-1 beaten egg
-Yeast
-1/2 stick melted butter
-1 cup milk
FOR THE FILLING:
-1 can of coconut milk
-1/4 cup brown sugar
-8 oz desiccated coconut** (I accidentally put milk in the video)
-1/2 tbsp. Vanilla Extract
FOR THE EGG WASH
-1 beaten egg
1 tbsp. water

INSTRUCTIONS:
*Make the yeast by adding all the ingredients for the yeast.
*Add all the ingredients for the dough and mix. Let it rise for an hour or more.
*Meanwhile, prepare the filling. Add all the ingredients for the filling over low-heat pan and mix until liquid is absorbed.
*Remove from heat and slightly cool.
*It's time to cut the dough. Follow exactly what I did on the video. If it is too big cut it in half and roll again.
*Flatten each dough and add 1tbsp. of filling.
*Pinch the corners together to fully enclose the filling.
*Arrange the filled dough, pinched side down, on a baking sheet at about 1 inch apart.
*Let the dough pieces rest for about 3-5 minutes before putting in the oven.
*Pre-heat oven for 375°F.
*Brush dough pieces with egg wash and sprinkle some desiccated coconut
*Bake for 15 minutes or until golden brown.
