Beet Risotto with Cauliflower Rice (recipe below)

This beet risotto is made with riced cauliflower as a replacement for rice.

Recipe:

What you’ll need:
- 1 bag cauliflower rice
- 4-5 fully cooked/boiled beets (depending on size)
- 2 tbsp. ghee
- 1/2 cup EVOO
- 1 whole leak (chopped)
- 16 oz. bone broth
- 1/4 - 1/3 cup nutritional yeast (depending on how much you are comfortable with)
- juice from 1 orange
- 3-5 cloves of garlic (minced)
- 1 tbsp. dried oregano
- 1 tbsp. dried basil
- 1 tbsp. dried thyme
- 1 tsp. garlic powder
- 1 tsp. rosemary
- 1 tsp. black pepper (if you do not like pepper, use a bit less)
- 1 tsp. sea salt

Process:
1) Chop and clean leaks. Heat skillet on low to medium heat. Add ghee, and then, caramelize the leeks.
2) Add cauliflower rice, minced garlic, and sea salt to the skillet. Fully cover with ½ of the bone broth amount. Cover with the lid, and simmer while you prepare the beet purée.
3) In a Vitamix, blend the remainder of the ingredients on high until smooth (spices, orange juice, garlic, EVOO, bone broth, beets, garlic powder, & black pepper). The color should be a vibrant pink.
4) Stir the beet purée and nutritional yeast into the simmering cauliflower rice. Cover for an additional 15 minutes, stirring occasionally.
5) Enjoy!
