Latino Corn Cakes with Vegetable & Tuna filling (Arepas con Atún)

This dish originally hails from Venezuela and is súper delicious, most people will be unfamiliar with working with cornmeal but it has similar properties to regular bread flour. The cooking process is fairly simple but requires diligent supervision so as not to burn anything. The filling is fantastically fresh and really bright in both colours and flavours. I highly recommend giving this recipe a go. It's a long one with some little edits here and there, grab your favourite snack and a juice box before watching! :p
