INGREDIENTS
2 eggs,
60g (% Cup) sugar,
50ml (3 tbsp) lemon juice;
30ml (2 tbsp) vegetable oil;
2 lemon (zest);
1 tsp (5 g) baking powder,
210g (1 % cups) all-purpose flour,
50g (4 cup) cornstarch;
120ml (% cup) milk;
Sugar for sprinkling.
METHOD
Whisk eggs with suga, lemon zest, vegetable
oil, and lemon juice.
Separately combine flour, cornstarch, and
baking powder.
Add dry ingredients into the egg mixture and
mix to combine.
Set the dough aside in the fridge for 30
minutes.
Cut the chilled dough into pieces and roll it into
balls.
Place cookies onto a baking sheet and bake
for 15 minutes at 180°C/350°F.
Let the cookies cool down, then dip them in
milk and cover in sugar.
