When God told Adam and Eve they would die if they disobeyed Him, why couldn't He just override His own decree and forgive them? God is so holy that once He says something, it is divine law and can't be revoked. God is perfect and when He says something, that's the way it is and there is no going back. When God declared death would be the payment for sin, He couldn't go back on that and had to work around His own decree to keep everything legal. That's why God became man so He could take on the sins of the world and die in our place. The cross was Jesus atoning for our sins, and this video will be a deep dive into what that means.
