Beer Cheese Soup

This soup is creamy, comforting and easy to make. Add the Cheddar Herb Beer Bread Croutons and you have fall soup perfection.

8 slices of thick cut bacon
2 T. bacon grease
4 T. butter
1/2 c. finely diced red bell pepper
1 c. each finely diced carrots, celery and onions
1/2 c. flour
12 oz. beer
4 c. chicken stock
1 1/2 c. heavy cream
1 t. thyme
1 t. garlic powder

1 t. seasoned salt
A few dashes of Worcestershire Sauce
1/2 c. each smoked gouda, smoked cheddar, white sharp cheddar
1 c. extra sharp cheddar
Top with
smoked paprika
shredded cheese
