Singapore and Asian BBQ Sambal Stingray inside

If you are in Japan, we hardly find stingrays in Sashimi. This is because they give off an odor of ammonia when they lose their freshness. Then why people are eating them?
Stingrays have strong chemoreception and use their sense of smell to find their food. They store urea in their tissues to control salt intake because unlike most fish they don't filter out the salt water, rather they store all the nutrients, which makes themselves taste bad and smell like ammonia. Whenever the fishermen caught stingrays, they would simply throwback to the sea. https://youtu.be/3xePKlBGMf0
