Kani Cream Korokke - Creamy Crab Croquette Recipe

【Ingredients】

2 tbsp Butter
1/2 onion, diced
4 Tbsp flour
300ml milk
100g crab meat
Salt
White pepper

Flour
1 Egg
Panko

Lettuce Leaves

Cooking Oil

【Steps】

1) Dice onion and sauté with butter on medium-low in a large non-stick frying pan until translucent.

2) Turn off the heat, add flour and mix well. Turn the heat back on and stir constantly for 2 minutes.

3) Add milk in small portions, stirring often. Stir over low heat for about 10 minutes or until texture is to desired creaminess.

4) Flake crab meat with a fork or fingers then add to mixture along with salt and white pepper then mix well.

5) Cook off moisture while stirring then remove from heat and cool.

6) Cool for at least 30 minutes.

7) When ready, prepare three bowls; one with flour, one with a beaten egg, and one with panko. Divide the chilled mixture into equal portions of 6, 8, or 10 depending on how large you want them.

8) With your hands lightly coated in flour, scoop each portion out and form small cylindrical shapes while trying to lightly compress to remove any air. Then dredge in flour, dip in the egg, and coat with panko, repeating for all croquettes.

9) In a large pan, heat ½ inch of oil to about 175C and fry croquettes about 5 at a time as not to overcrowd the pan. Leave them undisturbed for about 1 minute then flip and fry for another minute or until golden brown. Transfer the croquettes to a cooling rack or paper towel lined dish and serve immediately.
