Todays recipe for Arroz con Gandules is:

You will need to prepare ahead of time 2 cups of rice and 1 1/2 cups of water. The water will be a combined mixture of the liquid reserved from the can of gandules and water, totaling 1 1/2 cups.

1. Add two tbsp. vegetable oil and warm up on sautés mode.
2. add one small to medium chopped onion, 2 spoonfuls of soffit, and either ham, chorizo, or a packet of ham (as shown in the video), mix and sauce for 2-3 minutes.
3. Add the gandules (water reserved), olives, pack of sazon, and tomato sauce, mix and sauce for 2-3 minutes.
4. add the water, rice, and the following to your taste: salt, garlic powder, and onion powder. Mix everything and deglaze the bottom of the pot so you do not get a burn notice. After mixing everything, add an additional 1/2 cup water and DO NOT stir. (Letting the water sit on top will help the Instant pot come to pressure. Please refer to the video if you have issues with your Instant pot getting to pressure.) Close and seal the lid and cook everything on the MANUAL setting for 18 minutes.
5. After the 18 minutes is completed, allow the Instant pot to slow release the pressure for 10 minutes. Then quick release whatever pressure remains, stir your rice well, and enjoy!
